Graham Cracker Coffee Cake (AKA Grammie Cake)
My husband and I have been making this cake for several years now and it is an excellent treat to make ahead on Saturday night for a delicious, Sunday morning breakfast. You can eat it alone with a cup of coffee, or pair it with fruit, eggs, bacon, and juice for a wholesome meal.
Of course you could always just eat it as dessert, as we do on many occasions. In fact, this past weekend we were snowed in and it seemed like the perfect occasion to make our favorite graham cracker coffee cake, or as my boys call it “Grammie Cake”.

Lets Get Started!
Step 1: Preheat oven to 350 degrees Fahrenheit, and spray 13 x 9 x 2 cake pan with non-stick cooking spray.
Step 2: In a glass bowl, combine graham cracker crumbs, brown sugar, and cinnamon until well incorporated. If you don’t have actual graham cracker crumbs, you can make your own by crushing 10 graham cracker sheets with a rolling pin, or using a food processor.
Stir in melted butter and set aside.
Step 3: Prepare yellow cake mix according to package directions.
Step 4: Pour half of the cake batter into cake pan. Sprinkle with half of the graham cracker mixture. Carefully add the remaining cake batter, and sprinkle remaining graham cracker mixture on top.
Step 5: Bake cake for 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean.
Step 6: Combine powdered sugar and milk in bowl. Drizzle icing on cake, once it has cooled for 10-15 minutes. Use a condiment dispenser bottle or a Ziploc bag with the tip cut off for easy drizzling.
Step 7: Cut cake and enjoy!
