Oven Baked Lemon Pepper Chicken Thighs are tender, juicy, and delicious! These baked chicken thighs are seasoned to perfection with a blend of lemon, pepper, garlic, and smoky seasonings, and pair great with rice, veggies, or a salad for an easy weeknight dinner.

  1. To make these yummy baked lemon pepper chicken thighs, grab 2-3 pounds of chicken thighs (about 8-10 thighs) and trim off any excess fat. You can also cut the thighs into smaller pieces, if desired. This is definitely the most time consuming part of the entire recipe, but definitely worth it.
  2. Preheat oven to 400 degrees
  3. Next in a large bowl coat the chicken thighs with olive oil and freshly squeezed lemon juice and sprinkle with salt and pepper.
  4. Now it’s time to add the rest of your seasonings including lemon pepper, garlic powder, onion powder, paprika, chili powder, and Italian seasoning. Sprinkle all of the seasonings liberally over the chicken coating it on both sides.
  5. Next line a large baking sheet with parchment paper and place a wire roasting rack in the center of the pan. Spray with non-stick spray and place the chicken thighs on the roasting rack, ensuring the sides don’t touch each other. Bake for 30-40 minutes or until the chicken reaches an internal temperature of 165 degrees.
  6. Once fully cooked, let the chicken thighs rest for 5 minutes before serving and enjoy!

Notes

  • You can also use this recipe on boneless skinless chicken breasts, but may need to lessen the baking time by 5-10 minutes, depending on the size/thickness of your chicken.
  • Store leftover chicken in the refrigerator for up to 1 week, or freeze in a freezer safe bag or container for up to 3 months.
