Apple Peanut Butter French Toast Roll-Ups are an easy, delicious, holiday breakfast treat! Make them with bread, peanut butter, cinnamon, and apples.

Peanut Butter French Toast Roll-Ups

  • 24 slices bread ((I used whole wheat))
  • 1/2 cup sugar ((I used coconut))
  • 2 tsp cinnamon
  • 4 tbsp butter (melted)

Peanut Butter Cinnamon Sugar Swirl

  • 1 cup peanut butter
  • 2 tbsp brown sugar
  • 1 tsp sugar ((I used coconut))
  • 1/4 tsp cinnamon
  • 2 tsp water

Cinnamon Sugar Apples

  • 3 small apples
  • 1 tbsp sugar
  • 1 tsp cinnamon
  • 1 tbsp butter (for the pan)

Instructions

  1. Preheat oven to 400 degrees Fahrenheit. Peel, core, and dice apples into small chunks.

  2. Add diced apples to a lightly buttered pan, stir in cinnamon and sugar, and cook on medium-high for 5-10 minutes, or until tender.

  3. Cut off the crusts from each slice of bread and flatten with a rolling pin

  4. Combine brown sugar, cinnamon, and water in a bowl and microwave for 20 seconds. Stir into peanut butter to create spread mixture. Spread a spoonful of the peanut butter cinnamon sugar swirl mixture on each slice of bread and top with a spoonful of cinnamon sugar apples, avoiding overstuffing the roll-ups.
  5. Tightly roll up each one. Brush melted butter on each roll-up and then coat in the cinnamon sugar mixture.
  6. Place each roll up on a parchment paper lined baking sheet and bake for 10-12 minutes until crispy and golden brown. Lightly sprinkle with powdered sugar, if desired and enjoy!

**These roll-ups are best enjoyed fresh out of the oven!
