Apple Peanut Butter French Toast Roll-Ups are an easy and yummy breakfast treat and the perfect way to use up all that leftover bread and apples from holiday hosting. These French toast roll-ups feature a mouthwatering peanut butter and cinnamon swirl spread, diced cinnamon apples, and are baked golden brown in the oven in less than 15 minutes.
Even better, this recipe uses simple ingredients you already have in your fridge or pantry and are sure to delight both your family and guests!

The inspiration for these yummy Apple Peanut Butter French Toast Roll-Ups actually stems from my family’s undying love of both peanut butter and apples.
It’s such a classic, delicious combo and with the versatility of peanut butter, it’s always a pantry staple in our home. I also love the fact that with every two-tablespoon serving, we always get lots of protein, fiber, and unsaturated fats.
Beyond the incredible flavor combination of the cinnamon sugar apples and the peanut butter, these French toast roll-ups are so easy to make and the fact that they are baked in the oven will save you both time and hassle from being in the kitchen all morning long.

Step-By-Step Photo Recipe Guide
Step 1: Peel and dice up 3 small-medium apples using an apple peeler and sharpened knife.
Step 2: Add cinnamon and sugar to apples and cook on medium-high in a lightly buttered non-stick pan for 10 minutes, or until tender.
Step 3: Cut the crusts off slices of bread, and flatten out with a rolling pin.
Step 4: Spread a spoonful of the peanut butter cinnamon sugar swirl mixture on each slice of bread and top with a spoonful of apples, avoiding over-stuffing the roll-ups.
Step 5: Tightly roll up the bread and lightly coat with melted butter on both sides using a pastry brush.
Step 6: Coat each roll-up in a cinnamon sugar blend and place on a large baking sheet lined with parchment paper. Bake at 400 degrees for 10-12 minutes until crispy and lightly golden brown. Sprinkle with powdered sugar if desired and enjoy!

Ingredients
Peanut Butter French Toast Roll-Ups
- 24 slices bread ((I used whole wheat))
- 1/2 cup sugar ((I used coconut))
- 2 tsp cinnamon
- 4 tbsp butter (melted)
Peanut Butter Cinnamon Sugar Swirl
- 1 cup peanut butter
- 2 tbsp brown sugar
- 1 tsp sugar ((I used coconut))
- 1/4 tsp cinnamon
- 2 tsp water
Cinnamon Sugar Apples
- 3 small apples
- 1 tbsp sugar
- 1 tsp cinnamon
- 1 tbsp butter (for the pan)
Instructions

Preheat oven to 400 degrees Fahrenheit

Peel, core, and dice apples into small chunks.

Add diced apples to a lightly buttered pan, stir in cinnamon and sugar, and cook on medium-high for 5-10 minutes, or until tender.

Cut off the crusts from each slice of bread and flatten with a rolling pin
- Combine brown sugar, cinnamon, and water in a bowl and microwave for 20 seconds. Stir into peanut butter to create spread mixture.

Spread a spoonful of the peanut butter cinnamon sugar swirl mixture on each slice of bread and top with a spoonful of cinnamon sugar apples, avoiding overstuffing the roll-ups.

Brush melted butter on each roll-up and then coat in the cinnamon sugar mixture. Tightly roll up each one.

Place each roll up on a parchment paper lined baking sheet and bake for 10-12 minutes until crispy and golden brown.

Lightly sprinkle with powdered sugar, if desired and enjoy!
