If there’s one breakfast food our family loves, it’s French Toast! 

My popular Easy Baked French Toast Casserole is a total household favorite, but there’s another method both my kids and husband seem to absolutely adore and that’s my Easy French Toast Muffins. 

These French Toast Muffin Cups are super easy to make, absolutely delicious, and if you like your French Toast crispy on the outside and soft on the inside, these are for you!

These French Toast Muffin Cups are quick and easy to make anytime, absolutely delicious, and I love how crispy they get when baked in a muffin pan.

Cara’s Tips: Must-Have French Toast Muffin Ingredients

  1. STALE Brioche or French Bread – These are the two types of bread I’ve personally found to be best for making French Toast, and can be found in most grocery store bakeries. **Make sure you pre-dry out your bread for best results.
  2. GOOD QUALITY Cinnamon – Another key ingredient is good quality cinnamon. Trust me on this one, you can tell a difference between cheap cinnamon and it’s worth it.
  3. REAL Maple Syrup -Avoid using cheap pancake syrup and top your French Toast casserole with REAL Maple Syrup instead. It tastes so yummy drizzled on top!

French Toast Muffins FAQs

The best type of bread is stale French Bread or Brioche that has been dried out before-hand.

You can also use other types of bread but the more dense/crusty the bread, the better.

  1. No Bake Option: Cut your bread into cubes, and place on a wire rack over a cookie sheet to air out overnight or all day on your countertop. (This is the method I use 99% of the time)
  2. Bake Option: Cut your bread into cubes, place on a wire rack over a cookie sheet, and bake in the oven at 300 degrees for 8 minutes on each side. (This is great if you’re in a hurry)
  1. Maple Syrup – There’s nothing better than a drizzle of delicious maple syrup!
  2. Chopped Nuts  – For an added crunch, top with chopped walnuts, pecans, or almonds.
  3. Nut Butter – A slab of peanut butter, almond butter, or your favorite nut-free butter are absolutely yummy and a great way to add some protein!

After baking, I recommend transferring your muffins to a wire cooling rack.

Whether you are eating them right away or storing them for later, you want to make sure they fully cool so that the moisture from the heat/steam doesn’t make them turn soggy.

I also recommend only adding maple syrup (or preferred topping) right before you eat it.

Let them fully cool and store leftover French Toast muffins in an airtight container in the fridge for up to 5 days.

Yes – this is one of my family’s favorite make ahead muffins recipe to make ahead, store in the fridge, and re-heat throughout the week.

How to Re-Heat from Fridge:

  1. Oven (preferred method): Bake muffins on a large baking sheet at 350°F for 6-10 minutes, or until they reach your desired crispiness.
  2. Microwave:  Place individual servings on a microwave safe plate and warm for 15-30 seconds at a time until warm.

I personally recommend/prefer re-heating them in the oven, as they crisp up better than the microwave, but they’re delicious either way.

Yes, place in a freezer-safe bag or container and freeze for up to 3 months.

How to Re-Heat from Frozen:

  1. Oven: Reheat on a large baking sheet in a 350°F oven for 10-15 minutes or until warm. If you are concerned that they will get too brown/crispy, you can cover them with aluminum foil.
  2. Microwave: Warm individual servings in the microwave for 30 seconds to 1 minute intervals until warm.

How to Make Easy French Toast Muffins

These French Toast Muffins are incredibly EASY to make and because they make a large batch of 18-24 muffins (depending on the size of bread you use), they’re the perfect choice for making ahead to enjoy later! 

Below you’ll find step-by-step instructions and photos, a full list of  ingredients and recommended kitchen tools, and a convenient recipe card for easy printing/saving.

1. Cut Bread

First, cut a loaf of stale French Bread or Brioche into small cubes and place on a large baking sheet. Set aside.

*Check out my notes in the recipe card on how to dry out your bread for best results.

2. Prepare Custard

In a large mixing bowl place eggs, milk, sugar, vanilla, and cinnamon, and whisk until smooth and combined.

3. Combine Mixture and Refrigerate

Next add your dried bread cubes to the bowl and gently fold with the custard until combined. 

Cover and refrigerate for a minimum of 2 hours or overnight. This allows the custard enough time to fully soak into the bread.

4. Prepare Topping

Once ready to bake, remove the coated bread from the refrigerator and preheat oven to 375 degrees.

Next, prepare your brown sugar cinnamon topping by combining melted butter, brown sugar, sugar, cinnamon, and salt in a small mixing bowl. Stir together until smooth.

5. Fill Muffin Cups, Add Topping, & Bake

Next, spray a 12-cup muffin pan liberally with non-stick cooking spray.

Using a large spoon, fill your muffin cups evenly with the coated bread mixture. 

Spoon the mixture evenly over the top of each muffin cup and bake in the oven for 20-25 minutes or until the muffin cups reach your desired level of crispiness.

6. Let Cool & Top With Maple Syrup

Remove from the oven and place on a wire cooling rack to cool for 10 minutes before removing from pan. Repeat process for second batch of muffins.
