These Easy Cinnamon Coffee Cake Muffins are absolutely incredible and one of my absolute favorite muffins to bake since they’re so easy!
Pair these coffee cake muffins with streusel alongside your favorite cup of hot coffee and start your day off right!
Below I’ve outlined all the ingredients you’ll need to make these coffee muffins.
Cinnamon Coffee Cake Muffins Ingredients
Muffin Batter
- self-rising flour – My easy, go-to flour for muffins with no extra rising agent needed
- cinnamon – The flavor star of the show appearing in both the muffin batter and streusel topping
- granulated sugar – Adds the perfect amount of sweetness
- oil – I like using extra light olive oil, but you can use whatever oil you like!
- milk – adds moisture to the muffins
- vanilla extract – Adds a splash of flavor
- large egg – Gives the muffins structure
Streusel
- light brown sugar – Adds moisture and a yummy molasses flavor
- cinnamon – Pairs perfectly with brown sugar
- salt – To balance out the sweetness
- unsalted butter – You want your butter to be cold
- flour – Helps create the perfect streusel/crumble topping
Icing
- powdered sugar
- milk – I prefer 2% but use whatever you like
Coffee Muffins Expert Tips
Coffee cake muffins are one of my favorite breakfast treats because they’re so delicious and incredibly simple to make.
That said, here are some of my best tips to ensure your muffins turn out perfectly moist and perfectly delicious every single time.
Measure your flour correctly
I prefer using a food scale for all my baked goods to ensure I’m adding the correct amount, but if you don’t have one make sure you use a spoon to stir your flour first, then spoon into a measuring cup and level with a knife.
You want to avoid scooping your measuring cup in the flour, as this will result in adding way too much flour.
Don’t overmix the batter
With muffins you don’t want to overmix the batter, so stir until JUST combined.
It’s actually okay for the muffin batter to be lumpy and to still see a tiny little bit of flour once mixed.
If it’s super smooth like cake batter, you’ve probably over-mixed it.
Press the streusel in the batter
When adding the streusel topping on your muffins, lightly press the streusel down into the muffins to ensure they bake onto the muffins.
If you don’t press it down into the muffin batter, the streusel will sometimes fall off onto the sides of the pan, making a mess when baked.
Don’t overbake your muffins
Dry muffins are usually a result of overbaking, so watch your muffins towards the end of the bake time, and remove from the oven when they are right on the verge of being done.
The muffins will continue to cook for a few minutes while cooling in the pan.
Tip: One easy way to tell if the muffins are close to being done is they will actually start to pull away from the sides of the pan.

Does coffee cake muffins have coffee in it?
Although the name makes it sound the way, coffee cake muffins aren’t actually made with coffee.
Instead, they serve perfect paired with coffee and are great for breakfast, brunch, or an afternoon snack.
What flour do you use for coffee cake muffins?
This recipe uses my favorite self-rising flour.
Self rising flour makes life easier by combining all-purpose flour, baking soda, and salt in one, with no measuring out individual ingredients.
It’s my number one choice for cookies, muffins, biscuits, and pizza crust since it makes baked goods light and tender.

That said, if you only have all-purpose flour on hand you can still make this recipe by making your own self rising flour.
How do you make muffins moist?
Don’t over mix and overbake your muffins.
Stir until just combined and just like with cookies, you want to take your muffins out of the oven when they are right on the verge of being done.
The muffins will continue to cook for a few minutes while cooling in the pan.
Why did my muffins come out dry?
If your coffee muffins turned out dry, this is likely from over mixing the batter or over baking the muffins.
Muffin batter is supposed to be slightly lumpy so make sure you mix until all the ingredients are just combined.
I also recommend baking at the lowest time first, and depending on your oven you might even have to adjust the baking times slightly.
Can I add nuts to these muffins?
Yes – if you prefer a crunch, you can add a handful of chopped walnuts or pecans to the streusel topping.
How To Make Cinnamon Coffee Cake Muffins
These Cinnamon Coffee Cake Muffins are super simple to make and come together quick in just a few easy steps.
Below, I’ve included all the recommend kitchen tools you’ll need to make these coffee muffins, as well as step-by-step photos for reference.
Kitchen Tools Needed
Step 1 – Prepare Your Muffin Batter
In a large mixing bowl combine sugar, oil, cinnamon, milk, egg, and vanilla extract and whisk until combined.
Next, add 1/2 of the flour in with the wet ingredients, stir, and then add the other 1/2 and mix until just combined. DO NOT OVER MIX.
Step 2 – Prepare Your Streusel Topping
Next prepare the streusel topping by combining brown sugar, cinnamon, and flour in a small mixing bowl.
Once evenly combined, add in cold unsalted butter that was cut into small cubes.
Use a fork or your hands to break up the butter into the mixture until a crumbly streusel mixture forms.
It will resemble a crumbly brown sugar like in the photo below.
Step 3 – Scoop and Sprinkle
Scoop out muffin batter evenly into a well-sprayed muffin pan using a medium cookie scoop.
Fill each muffin tin about 2/3 full.
Sprinkle the streusel evenly over the top of the muffin batter and gently press into the tops of each muffin.
Step 4 – Bake and Let Cool
Bake muffins in the oven until they are a light golden brown and let cool for 5 minutes in the pan, before transferring to a cooling rack to cool for an additional 10 minutes.
Step 5 – Drizzle With Icing
While muffins are cooling, prepare icing by combining powdered sugar and milk in a small bowl.
Whisk together until smooth, and add additional milk if needed to reach desired drizzle consistency.
Use a whisk or spoon and drizzle icing evenly on top of the muffins.
I like to just use the end of my whisk and it makes them look so pretty!
Step 6 – Enjoy Warm With Coffee
Serve cinnamon coffee cake muffins warm with a cup of hot coffee and enjoy!

Ingredients
Muffin Batter
- 1 1/2 cups self-rising flour
- 1/3 cup granulated sugar
- 1 tsp cinnamon
- 1/3 cup oil
- 1 large egg

Streusel Topping
- 1/4 cup light brown sugar
- 1 tsp cinnamon
- 1/8 tsp salt
- 2 tbsp unsalted butter, cold
- 3 tbsp flour
Icing
- 1/4 cup powdered sugar
- 1 1/2– 2 tsp milk
Instructions
- Preheat oven to 350 degrees and spray a muffin pan with non-stick cooking spray.
- In a large mixing bowl combine sugar, oil, cinnamon, milk, egg, and vanilla extract and whisk until combined.
- Next, add 1/2 of the flour in with the wet ingredients, stir, and then add the other 1/2 and mix until just combined. DO NOT OVER MIX.
- Scoop out muffin batter evenly into a well-sprayed muffin pan using a medium cookie scoop. Fill each muffin tin about 2/3 full.

Notes
- Store leftover coffee muffins in an airtight container for up to 5 days. You can also freeze them in a freezer safe ziplock bag for up to 3 months.
