The recipe is a fun twist on my popular Cake Mix Coffee Cake, and I love how it tastes with the addition of fresh, diced apples.
I also added in sour cream to the cake mix to make it extra moist and tender.

This apple coffee cake comes together quick and easy thanks to a simple boxed yellow cake mix, but trust me when I say this coffee cake tastes incredible and no one will ever believe that it isn’t made from scratch.
Sour cream, applesauce, oil, eggs, and vanilla extract combine to make this one of the most moist and delicious cakes you’ll ever eat.
Brown Sugar Cinnamon Apples
This apple cinnamon coffee cake is loaded with yummy, fresh diced apples coated in a delicious brown sugar and cinnamon mixture.
For the perfect balance of sweet and tart, I ended up using a combination of Granny Smith apples and Honey Crisp apples.
Graham Cracker Streusel Topping
One of the BEST streusel toppings for a coffee cake is a delicious cinnamon graham cracker streusel.
Brown sugar, cinnamon, melted unsalted butter, and crumbled cinnamon graham crackers are all you need to make this simple streusel topping.
Powdered Sugar Glaze
To make this apple coffee cake extra pretty and a little more sweet, I love to drizzle the top with a simple powdered sugar glaze.
Simply combine milk and powdered sugar and spoon over the top.

Although you might think that the name coffee cake is indicative of the ingredients, most coffee cakes don’t actually have coffee in them, nor is that what the name implies.
Instead, it is called coffee cake because it is a cake meant to be enjoyed with a cup of coffee – either at breakfast or dessert.
What is the difference between coffee cake and regular cake?
The primary difference between coffee cake and regular cake is coffee cakes typically have a streusel topping or crumble on top of them, as opposed to regular cake which is served either plain or with some type of frosting/icing.
This apple coffee cake is delicious because it has both a yummy cinnamon streusel topping AND a powdered sugar glaze.
What are the best apples to use for apple coffee cake?
Any baking apple will work for this apple coffee cake.
I personally love using a combination of Granny Smith and Honey Crisp for a balance of sweet and tart.
Fuji and Golden Delicious apples are also a great choice.
Do you peel apples before baking?
It’s completely personal preference, but I would recommend peeling your apples for this recipe since you are putting them in the cake batter.
What’s the best way to peel, core and slice apples?
I absolutely LOVE this apple peeler/corer/slicer that makes things super quick and easy. Just make sure you’re extra careful using it!
What does sour cream do in baking?
I’m a HUGE fan of using sour cream in baking, and that’s because it makes cakes and other baked goods taste incredibly delicious, moist, and rich.
It’s also one of my favorite tricks for taking a basic boxed cake mix to the next level.
Can I use a different glaze or omit?
Yes, feel free to glaze the cake with whatever you like.
A caramel glaze, maple glaze, or cream cheese glaze would all be delicious.
You could also just sift some powdered sugar on top of the warm cake, or omit any extra sugar altogether.
It will be delicious no matter what!
Can I add nuts?
Yes, nuts are a delicious addition and great way to add a crunch and texture to this cake. I recommend adding 1/4 cup of chopped walnuts or pecans to the streusel topping mixture.

To Store: Leftover apple cinnamon coffee cake should be stored at room temperature in an airtight container or covered with aluminum foil for up to 5 days.
To Freeze: Freeze individual slices wrapped in saran wrap in a freezer safe bag for up to 1 month. Once ready to eat, thaw overnight in the fridge, and re-heat in the microwave as desired.

Ingredients
Coffee Cake
- 1 yellow cake mix
- 1/2 cup oil
- 1/4 cup applesauce
- 1 cup sour cream
- 4 large eggs
- 1 tsp vanilla extract
Cinnamon Apples
- 2–3 apples, peeled and diced into small pieces (I recommend half Granny Smith, half Honeycrisp)
- 2 tbsp of cinnamon/brown sugar mixture below
Streusel Topping
- 1/2 cup brown sugar
- 1 tbsp cinnamon
- 9 cinnamon graham cracker sheets, crumbled into small pieces
- 1/4 cup unsalted butter, melted
Powdered Sugar Glaze
- 1/2 cup powdered sugar
- 1 tbsp milk
Instructions
- Preheat oven to 350 degrees F and spray a 9×13 cake pan or baking dish with non-stick cooking spray.
- Next, peel, slice, and dice your apples (I recommend this amazing peeler/slicer). Place in a small bowl and set aside.
- In a medium mixing bowl, combine brown sugar and cinnamon and stir until fully combined. Take 2 tbsp and add it to evenly coat the diced apples. Set apple mixture aside.
- To make your streusel topping, melt your butter in a microwave safe bowl and add to the remaining brown sugar and cinnamon mixture. Add in the crumbled graham cracker sheets and stir with a fork until combined.
- To prepare your cake batter, combine sour cream, applesauce, oil, eggs, and vanilla extract in a large mixing bowl and beat with an electric hand mixer until smooth and combined. Next add in the yellow cake mix and mix with an electric mixer until combined.
- Add in the diced apples and stir by hand until evenly incorporated. Pour cake batter into prepared cake pan and smooth the top with a non-stick spatula.
- Evenly sprinkle the top of the cake with the streusel and bake in the oven for 32-35 minutes, or until a toothpick comes out of the center clean.
- Let cool on a wire rack for at least 15 minutes before glazing.
- While cake is cooling, prepare glaze by whisking together powdered sugar and milk in a small bowl. If glaze is too thick, you can add additional milk in increments of 1 tsp until desired consistency is reached. Or if it is too thin, you can always add a little more powdered sugar.
- Once cake has cooled for 15 minutes, drizzle the powdered sugar glaze over the top.
- Serve warm and enjoy!
