Fresh Strawberry Coffee Cake with Crumb Topping
Strawberries and coffee cake are pretty much a match made in heaven if you ask me. And they’re one of my favorite things in the world to make for a special weekend breakfast treat (or dessert).
That’s why I couldn’t wait to share with you my delicious Fresh Strawberry Coffee Cake with Crumb Topping recipe. Featuring a homemade vanilla butter cake, fresh strawberries, and a brown sugar cinnamon crumb topping, you’ll be wanting to make this coffee cake every weekend from here on out.
The slight tartness of the strawberries combined with the sweet brown sugar cinnamon streusel and buttery-vanilla flavor of the coffee cake are just divine. And strawberries and streusel aside, this cake has to be the best one I’ve ever made/ate, hands down. It’s soft, moist, and practically melts in your mouth.

Homemade Strawberry Coffee Cake
If you’re thinking that this Strawberry Coffee Cake is complicated because it’s homemade, think again. It’s honestly so EASY and once you taste it, you’ll want to make it again and again.
Ingredients Needed
- unsalted butter
- granulated sugar
- large egg
- all-purpose flour
- salt
- baking powder
- baking soda
- sour cream
- vanilla extract
- fresh strawberries
- brown sugar
- ground cinnamon
For this strawberry streusel coffee cake, you’ll be making basically three layers, including the cake layer, the strawberry layer, and the brown sugar cinnamon streusel layer.
The Cake Layer
The cake layer is soft, moist, and has a delicious butter-vanilla flavor.
The secret ingredient? Sour cream. You can’t even taste it once it’s baked, but it works wonders in making it light, fluffy, and moist.

Strawberry Layer
Next up is the strawberry layer which is made by dicing up 1 1/2 cups of fresh strawberries.
You don’t even have to sweeten them up, just toss them over the cake layer and you’re good to go.
Streusel Layer
Lastly, the top layer is of course the delicious streusel made from brown sugar, cinnamon, flour, and melted butter, and bakes to a gorgeous light golden brown.
Although coffee cake is traditionally ate at breakfast time, this is one of those treats that can easily be ate for dessert, brunch, or anytime of the day really.
It’s also the perfect cake to make in the spring and summer months when strawberries are in season, and our family loves making it anytime we have some leftover strawberries.

Ingredients
Strawberry Coffee Cake
1/3 cup unsalted butter, softened to room temperature
1/2 cup granulated sugar (I use coconut)
1 large egg
1 cup all-purpose flour
1/2 tsp salt
1/2 tsp baking powder
1/4 tsp baking soda
1/2 cup sour cream, at room temperature
2 tsp vanilla extract
1 1/2 cups fresh strawberries, diced or sliced
Crumb Topping
3/4 cups all-purpose flour
1/4 cup granulated sugar
1 tbsp brown sugar
1/4 tsp salt
1/2 tsp ground cinnamon
1/4 cup unsalted butter, melted and cooled
Instructions
Strawberry Coffee Cake
- Preheat oven to 350 degrees Fahrenheit and spray an 8×8 pan with non-stick cooking spray
- Clean and dice 1 1/2 cups of strawberries
- In a large glass mixing bowl, mix together butter and sugar with a hand mixer for 2-3 minutes, or until light and fluffy. Add in the room temperature egg and mix until combined.
- Next, slowly add in flour, salt, baking powder, and baking soda and mix on low until just combined. Lastly, add in sour cream and vanilla extract and stir with a spoon until just mixed, being careful not to over mix.
- Pour the cake batter evenly into the 8×8 pan and top with clean, diced strawberries. Set aside.
Streusel Crumb Topping
- In a microwave safe bowl, melt butter and let cool while preparing other ingredients. In a mixing bowl, combine flour, sugars, salt, and cinnamon until mixed.
- Once cooled, add melted butter into the flour mixture and stir together until a crumb mixture forms.
- Sprinkle crumb topping over the strawberries and bake in the oven for 30-40 minutes, or until a toothpick comes out clean.
- Once baked, let cool for 15-20 minutes before serving.
Notes
Store any leftover cake in an airtight container in the refrigerator, and re-heat in the microwave.
