Between this irresistible Strawberry Jello Poke Cake, my fun Pineapple Coconut Poke Cake, and my delicious Banana Pudding Poke Cake, I’m pretty much poke cake obsessed!

I seriously wish I hadn’t been so late hopping on the poke cake bandwagon.

I guess I always thought they’d be complicated or something, but let me tell ya- I was wrong.

They’re honestly one of my favorite summertime cakes to make, and they couldn’t be more simple to make.

And this Strawberry Jello Poke Cake is pretty much the perfect light and refreshing summer cake.

It’s so delicious and moist with double the strawberry jello, and I love how yummy the fresh strawberries taste paired with whipped cream.

 

Why Is It Called Poke Cake?

Poke cakes first made their appearance in the 1970s and have been popular ever since.

Just like the name implies, it’s a cake made by poking holes in the baked cake, and then filled with either a jello mixture, pudding, or condensed milk.

Poke cakes are so moist and absolutely delicious and the possibilities really are endless.

Can I use other flavors of jello instead of Strawberry?

Yes, absolutely!

You can easily substitute any flavor jello you want. I think pineapple, lemon, lemon-lime, or orange would all be delicious, and you could even do one box of strawberry and one box of another fruit jello flavor for a yummy tropical combo.

 

Can I use other cake mix flavors?

Again, yes! Lemon, pineapple, yellow, or even chocolate cake mix could be used for this cake.

 

Can I top with a different frosting?

I personally love how whipped cream tastes with this cake, but you could do a cream cheese frosting, or even use your favorite store bought frosting, if desired.

What do I use to poke the holes in this cake?

To get the prettiest poke cake effect and even distribution of the Jello, I recommend using the end of this wooden spoon and poking several holes evenly spaced on your cake.

If you don’t have a wooden spoon, you can also use something similar sized in your kitchen or even a clean makeup brush handle.

 

How long does it take for the jello to set?

The jello in this cake doesn’t fully set like regular jello does, but you still want to refrigerate it for a couple of hours so that it has time to set up.

 

How do I store strawberry jello poke cake?

Fridge – Leftover cake should be covered with plastic wrap and refrigerated. It will last for 3-4 days refrigerated.

Freezer – This cake can be frozen for up to 3 months; however, I personally recommend freezing without the whipped cream and strawberries on top, and adding those before you are ready to eat.

To freeze, wrap the baked, cooled cake with plastic wrap and aluminum foil. Once ready to eat, thaw overnight in the fridge.

This Delicious and Easy Strawberry Jello Poke Cake is the perfect summer cake made with just 5 ingredients including fresh strawberries, a white cake mix, strawberry jello mix, water, and whipped cream topping.

Instructions

  1. Preheat oven to 350 degrees and spray a 9×13 glass baking dish with non-stick spray. Prepare cake mix batter in a large mixing bowl according to package instructions and place in the oven as directed.
  2. Once cake has fully baked, remove from oven and let cool in the pan on a wire rack for 1 hour.
  3. Using the end of a wooden spoon, gently poke holes evenly across the entire cake.
  4. Next mix together two 3 ounce boxes of strawberry jello mix with 1 1/2 cups (boiling) hot water. Stir until the jello has completely dissolved. Next add 1 cup of cold water and stir for 1 minute.
  5. Pour jello mixture evenly over the cake, then cover with plastic wrap and place in the refrigerator to chill for 2-4 hours. *For a cleaner “poke cake” effect, use a large spoon to drop the jello mixture evenly across the cake.
  6. While cake is refrigerated, clean and slice or dice strawberries, and (if desired) add a teaspoon or two of sugar to sweeten them. Place in an airtight container and refrigerate until ready to decorate/serve.
  7. Remove cooled cake from the refrigerator and spread either homemade whipped cream or 1 8 ounce tub of cool whip on top with a spatula.
  8. Re-cover with plastic wrap and store in the refrigerator until ready to serve. Before serving, top with your diced or sliced strawberries, slice, and enjoy!

    1. Yes – I usually do. I recommend waiting to add the strawberries on top until you are ready to serve though, as they can become soggy.
