Today I’m excited to share one of my favorite breakfast treats with you – Graham Cracker Cinnamon Streusel Coffee Cake!

This classic coffee cake recipe starts with a simple yellow cake mix and features a delicious cinnamon sugar and graham cracker streusel that is layered both in the cake and on top.

A light drizzle of icing perfectly complements the flavors in the cake and trust me when I say you’ll want to eat multiple pieces of this delicious and moist coffee cake!

Graham Cracker Cinnamon Streusel Coffee Cake

My husband and I have been making this graham cracker coffee cake for several years now and it is an excellent treat to make ahead on Saturday night for a delicious, Sunday morning breakfast. You can eat this coffee cake alone, or pair it with fruit, eggs, bacon, and juice for a wholesome meal.

Of course you can also eat this coffee cake for dessert, as we do on many occasions. In fact, this past weekend we were snowed in and it seemed like the perfect occasion to make our favorite graham cracker coffee cake, or as my boys call it “Grammie Cake”.

Graham Cracker Cinnamon Streusel Coffee Cake Recipe

To make this delicious Graham Cracker Cinnamon Streusel Coffee Cake recipe you only need a few simple ingredients and kitchen tools. I’ve included some of my favorites below to make it easier for you!

Recommended Kitchen Tools:

Step 1: Preheat oven to 350 degrees Fahrenheit, and spray 13 x 9 x 2 glass dish or cake pan with non-stick cooking spray.

Step 2: In a large glass mixing bowl, combine graham cracker crumbs, brown sugar, and cinnamon until well incorporated. If you don’t have actual graham cracker crumbs, you can make your own by crushing 10 graham cracker sheets with a rolling pin, or using a food processor. Stir in melted butter and set aside.

Step 3: Prepare yellow cake mix according to package directions.

Step 4: Pour half of the coffee cake batter into cake pan. Sprinkle with half of the graham cracker mixture. Carefully add the remaining cake batter, and sprinkle remaining graham cracker mixture on top.

Step 5: Bake coffee cake for 40-45 minutes or until a toothpick inserted in the center of the cake comes out clean. Place cake pan on a cooling rack to cool for 10-15 minutes.

Step 6: Combine powdered sugar and milk in bowl. Drizzle icing on coffee cake. Use a condiment dispenser bottle or a Ziploc bag with the tip cut off for easy drizzling.

Step 7: Cut your graham cracker coffee cake into slices and enjoy! Store any leftovers in an airtight container.

My graham cracker streusel coffee cake is the most delicious coffee cake! It’s made with a yellow cake mix and features an epic cinnamon sugar graham cracker streusel that’s to die for!

  • ¾ cup packaged brown sugar
  • 1 ½ tsp ground cinnamon
  • ½ cup butter (melted)
  • 1 package yellow cake mix
  • ½ cup powdered sugar
  • 1 tbsp milk

Instructions
