Graham Cracker Cinnamon Streusel Coffee Cake

My graham cracker streusel coffee cake is the most delicious coffee cake! It’s made with a yellow cake mix and features an epic cinnamon sugar graham cracker streusel that’s to die for!

Ingredients

  • 1 ½ cups graham cracker crumbs (1012 crackers)
  • ¾ cup packaged brown sugar
  • 1 ½ tsp ground cinnamon
  • ½ cup butter (melted)
  • 1 package yellow cake mix
  • ½ cup powdered sugar
  • 1 tbsp milk

Instructions

  1. Preheat oven to 350 degrees Fahrenheit and spray 13 x 9 x 2 glass cake pan with non-stick cooking spray.
  2. In a large glass mixing bowl, combine graham cracker crumbs, brown sugar, and cinnamon until well incorporated. Stir in melted butter and set aside.
  3. Prepare yellow cake mix according to package directions.
  4. Pour half of the cake batter into cake pan. Sprinkle with half of the graham cracker mixture. Carefully add the remaining cake batter, and sprinkle remaining graham cracker mixture on top.
  5. Bake coffee cake for 40-43 minutes or until a toothpick inserted in the center of the cake comes out clean.Place cake pan on a cooling rack and let cool for 10-15 minutes.
  6. Combine powdered sugar and milk in bowl. Drizzle icing on cake once fully cooled. Use a condiment dispenser bottle or a Ziploc bag with the tip cut off for easy drizzling.
  7. Cut coffee cake into slices and store leftovers in airtight container.
