Overnight Blueberry Cream Cheese French Toast Casserole
Breakfast casseroles are one of my favorites to make on the weekends or during the holiday season for Christmas or New Years, and this blueberry French Toast Casserole is no exception.
It’s so easy to prep ahead the night before, cover and store in the fridge, and bake the next morning with minimal effort.
I also absolutely love how the combination of fresh blueberries and sweetened cream cheese really takes a simple French toast casserole to the next level!
Blueberry and Cream Cheese French Toast Casserole – Must Have Ingredients
This Cream Cheese Stuffed Blueberry French Toast Casserole is SUPER easy to make, but below I’ve included a list of all the must-have ingredients to make your blueberry breakfast casserole taste amazing!
1. STALE French Bread or Brioche
Any time I make French toast casserole, I always use either French Bread or Brioche.
You can find them at most grocery store bakeries, and they create the best texture in my opinion.
It’s also super important to use STALE bread, or bread that’s a few days old and/or has been dried out.
If your bread isn’t dry enough, it unfortunately won’t hold up when soaked in the wet custard and will turn to mush, which is never good.

2. GOOD QUALITY Cinnamon
Another key ingredient for delicious French Toast is good quality cinnamon.
Don’t skimp here and use the cheap stuff – I promise you can taste a difference.
If you’re feeling extra fancy, I recommend purchasing cinnamon sticks and grinding them up with this spice grinder.
It gives you an amazing flavor and you can use it in so many recipes including my famous One Hour Cinnamon Rolls.
But if you’re short on time or don’t have a spice grinder, just grab a jar of this ground cinnamon.
3. Blueberries
For blueberries you can use either fresh blueberries or frozen blueberries, but I do recommend using organic for the best flavor.
I personally love the fact I can use fresh or frozen, because it means I can make this blueberry French Toast casserole anytime of the year!
If using fresh blueberries, simply rinse, pat dry with paper towels, and add them to your recipe.
If using frozen blueberries, just add them in straight from the freezer – no thawing required.

4. Cream Cheese
This blueberry cream cheese French toast casserole is an indulgent breakfast treat and it’s best made with either full-fat cream cheese or 1/3 fat cream cheese.
Sometimes I like to use half of each for balance, but I definitely don’t recommend using fat-free.
Fat free cream cheese simply doesn’t taste as good and won’t have the right texture for this French toast casserole.

What type of bread is best for Baked Blueberry French Toast Casserole with Cream Cheese?
The best type of bread for this Blueberry Cheesecake French Toast Casserole is stale French Bread or Brioche that has been dried out.
You can also use other types of bread but the more dense/crusty the bread, the better.
How to dry out bread for French Toast – 2 Easy Ways:
No Bake Option (my preference): Cut your bread into cubes, and place on a wire cooling rack over a large cookie sheet to air out overnight or all day on your countertop.
Bake Option (if in a hurry): Cut your bread into cubes, place on a wire cooling rack over a large cookie sheet, and bake in the oven at 300 degrees for 8 minutes on each side.
How do you keep Blueberry French Toast Casserole from getting soggy?
There are 3 key elements to making the perfect Stuffed Blueberry Cream Cheese French Toast Casserole that isn’t soggy!
First off, make sure you use dry/stale bread. If your bread is fresh, it will turn to mush.
Second, gently fold and toss the bread and wet mixture in a bowl, instead of just pouring the mixture on top. This ensures it all gets combined evenly.
Third, allow your French toast casserole to chill and soak for a minimum of 2 hours to overnight.
Can I make ahead/overnight?
Yes – I actually recommend it since it requires a minimum of 2 hours chill time anyways.
It’s one of my favorite easy breakfasts to make ahead for holidays, and you can easily prep the night before, cover, and refrigerate until morning.
The next day, uncover the casserole, prepare the brown sugar cinnamon topping and drizzle evenly on top, and bake in the oven as directed.
Easy peasy!
What should I top my Blueberry Cream Cheese French Toast Casserole with?
This stuffed blueberry French toast casserole is honestly delicious and perfect on its own, but here’s a few yummy topping ideas if you want to make it even sweeter:
- Powdered Sugar – I like to sift a light dusting over top. This also makes it super pretty!
- Maple Syrup – Drizzle on good quality maple syrup like this one
- Chopped Nuts – If you love a crunch, add some chopped walnuts or pecans on top.

Our family loves this with a side of crispy bacon, scrambled eggs, and/or fresh fruit.
I also won’t deny that I sometimes love to eat a slice for dessert!
How do I store leftover Blueberry French Toast Bake?
Store leftovers covered in the refrigerator for up to 5 days.
Can You Freeze Blueberry French Toast Casserole?
Yes, this casserole can be baked, cooled, and frozen for up to 3 months.
Prepare and bake the casserole as directed, let cool, and cover tightly with plastic wrap and aluminum foil before placing in the freezer.
Once ready to eat, refrigerate overnight or at least 24 hours before baking.
Bake in the oven uncovered at 350 degrees F for 30 minutes or until warm throughout.
How do you keep French toast casserole warm?
To keep baked French toast Casserole warm, place back in the warm, turned off oven, with the door left open.
This will keep it warm without it getting too toasty.

- 1 Loaf of French Bread or Brioche

Step 1: Prep Your Bread
First, use a knife and cutting board to cut French bread or Brioche into small cubes and place on a wire cooling rack over a large baking tray to dry out for several hours to overnight.
Step 2: Prepare Your Egg Mixture
In a large mixing bowl whisk eggs together until smooth, and combine with milk, sugar, cinnamon, and vanilla extract until evenly incorporated.
Step 3: Coat Bread with Egg Mixture
Next, place pre-dried out, cubed French or Brioche bread into a large bowl.
Pour the egg mixture over your bread cubes and gently fold together until combined. Set aside.
Step 4: Prepare Cream Cheese Filling
In a medium mixing bowl combine softened cream cheese, granulated sugar, and lemon juice and use an electric hand mixer to mix together until smooth and creamy.
Step 5: Prepare Casserole and Refrigerate
Next spray a 9×13 Baking Dish liberally with non-stick cooking spray.
Pour half of the coated bread in the prepared baking dish, and spread evenly.
Next use a small cookie scoop and drop spoonfuls of cream cheese over the bread. Use an angled spatula or spoon to smooth out.
Top with an even layer of half of the fresh or frozen blueberries.
Repeat with the remaining ingredients for a second layer of bread, cream cheese, and blueberries.
Cover the baking dish with plastic wrap or foil, and refrigerate for a minimum of 2 hours or overnight.
Step 6: Prepare Brown Sugar Cinnamon Glaze
Once ready to bake, remove the casserole dish from the refrigerator and preheat oven to 375 degrees.
Prepare your brown sugar cinnamon topping by combining melted butter, brown sugar, cinnamon, and salt in a mixing bowl. Whisk together until smooth.
Step 7: Drizzle Top and Bake
Spoon the mixture evenly over the top of your casserole and bake in the oven for 35-45 minutes or until it is a light golden brown and your desired level of crispiness.
Step 8: Let Cool
Place on a wire cooling rack to cool for 5-10 minutes before serving.
Step 9: Add Toppings if Desired
If desired, use a sifter to add an even layer of powdered sugar or serve with maple syrup and enjoy!

- 12 oz. (1 1/2 blocks) cream cheese, softened and cubed (full-fat or 1/3 fat recommended)

- 4 tbsp unsalted butter, melted
- 3 tbsp light brown sugar
- 1 tsp cinnamon
- 1/8 tsp salt
