3 Delicious Homemade Pop Tarts

Pop Tarts have been one of mine and my family’s long-time favorite breakfast treats and snack. Growing up I used to eat the Kelloggs Brown Sugar Cinnamon pop tarts and strawberry pop tarts ALL the time, and they’ll always hold a special place in my heart.

While I rarely eat store-bought pop tarts nowadays, I recently wanted to try out making them homemade with my boys and they turned out awesome!

How to Make Delicious Homemade Pop Tarts

In today’s post you’ll find the recipes on how to make Strawberry Pop Tarts, Brown Sugar Cinnamon Pop Tarts, and Blueberry Pop Tarts, and all three are absolutely delicious! 

Aside from tasting amazing, these homemade pop tarts are also easy to make and well worth the extra time and effort. The most time consuming part is making your own homemade pie crust dough, which is actually pretty simple once you get the hang of it. 

Below you’ll find all the recommended kitchen tools you’ll need to make your pop tarts and some helpful tips to ensure they turn out amazing!

Tips for Making Delicious Homemade Pop Tarts

Chill Your Dough

Chilling your dough is super important if you want a flaky, buttery delicious crust (aka the thing that makes a pop tart taste amazing).

I personally recommend making your pie crust dough ahead of time, wrapping with plastic wrap, and refrigerating the night before you plan to make your homemade pop tarts. If you don’t have time to do that, at the very least I recommend letting your dough chill in the fridge for at least an hour before prepping.

Once you’re ready to make your pop tarts, remove your dough from the refrigerator and let it come to room temperature for about 15 minutes. This will help make rolling out the dough easier.

 
Use Parchment Paper, Rolling Pin, & Pizza Cutter

The next step in making your pop tarts is rolling out the dough, and I highly recommend using parchment paper and a rolling pin to make this step easier. Simply roll out your dough into about a 9×12 rectangle, or until the dough is about 1/8 inch thick.

Using a pizza cutter, cut into 9 rectangles, even in size. If you want everything to be super accurate in shape/size, feel free to use a measuring stick, but it doesn’t have to be perfect.

My kids actually helped make this batch and although they weren’t perfectly uniform, they still look great!

 

Egg-Wash & Crimping

Once your pop tart dough is ready to go, egg wash the bottom layer of dough and place the filling onto the center of each rectangle. Make sure you don’t overfill each pop tart, as it will seep out when baking. 

Add the top layer of pastry dough on top of the filling and using a fork, crimp around the edges to seal it in. Brush another layer of egg wash on top. The egg wash is what gives your pop tart that beautiful, golden color when it bakes. 

Place the pop tarts on a parchment-lined baking sheet and refrigerate for 15-20 minutes before baking. Remember, cold dough creates a better pastry. 

 

Let Cool Before Icing/Decorating

Next bake your homemade pop tarts to a light golden brown color, remove from the oven and place on a wire rack to cool. While they are cooling, prepare your icing to a drizzle consistency. 

Once cooled, carefully spoon icing onto each homemade pop tart. I recommend doing this over a baking sheet to avoid making a mess with your drips. You also would add your sprinkles on top during this step, if desired. 

Let the pop tarts sit until the icing has firmed up and alas you can enjoy all your hardwork by eating one of your delicious homemade poptarts (or two). 

 

Want to Make All 3 Flavors in One Batch? 

Although I included three separate recipes below for strawberry, blueberry, and brown sugar cinnamon pop tarts, you can easily make one batch with all three flavors.

You would just prepare the dough as directed, and fill as many pop tarts of each flavor as desired. Also, the brown sugar cinnamon filling will stay good in an air-tight container, so I would recommend making the full amount and then just storing the extra and using later.

Pastry Dough

  • 2 & 2/3 Cup all-purpose flour
  • 3/4 cup cold butter, cubed
  • 2 tbsp powdered sugar
  • 2 egg yolks
  • 4 tbsp water
  • generous pinch of salt

Filling

  • Strawberry Jam (I love Smucker’s Natural Preserves)

Egg Wash

  • 1 large egg mixed with 2 teaspoons milk

Glaze

  • 3/4 cup powdered sugar, sifted
  • 1 tbsp milk, (plus more, as needed)
  • 1/4 tsp vanilla extract

Decoration

  • Colored Sprinkles

Instructions

  • In a food processor, combine flour, sugar, and salt. Next add in cubes of the cold butter and pulse until a crumbly consistency. Mix together the egg yolks and water and add to the dry ingredients. Pulse until a dough forms. Knead briefly and divide evenly into two halves.
  • Next, wrap your pie dough crusts with plastic wrap and refrigerate for 30 minutes to 1 hour (or overnight). You can also freeze your pastry dough if you want to make it ahead of time.
  • Once you are ready to make your pop tarts, remove dough from the refrigerator and let rest at room temperature for 15 minutes. Using a rolling pin, roll out one dough disc on parchment paper that has been lightly dusted with flour. Roll out your dough into about a 9×12 rectangle, or until the dough is about 1/8 inch thick.

Ingredients

Scale

Pastry Dough

  • 2 & 2/3 Cup all-purpose flour
  • 3/4 cup cold butter, cubed
  • 2 tbsp powdered sugar
