Easy Loaded Cake Mix Cookie Bars (Family Favorite)

Loaded Cake Mix Cookie Bars are made in under 25 minutes with a boxed white or yellow cake mix and filled with chocolate chips, peanut butter chips, and mini M&M’s. So delicious and easy to make!

Instructions

  1. Preheat oven to 350 degrees and grease a 9×13 glass baking dish with non-stick cooking spray.
  2. In a large glass mixing bowl, combine cake mix, olive oil, and eggs using an electric hand mixer and mix until smooth and combined. The batter will be very thick.
  3. Gently fold in chocolate chips, peanut butter chips, and miniature M&M’s.
  4. Spread batter evenly in the dish using a rubber spatula. If needed, slightly wet hands and press until evenly spread.
  5. If desired, sprinkle the top with a few more chocolate chips, peanut butter chips, and M&M’s.
  6. Bake for 20-25 minutes or until a light golden brown and a toothpick comes out clean.
  7. Remove from oven and let cool on a cooling rack  for 10 minutes.
  8. Serve warm as is or top with a scoop of ice cream and chocolate drizzle and enjoy!

How to Store Leftover Cake Mix Cookie Bars

Store any leftovers in an airtight container or ziplock bag at room temperature for up to 1 week.

I actually prefer these the next day, as all the flavors taste better, and they’re perfectly soft and chewy.

How to Freeze Cake Mix Cookie Bars

To freeze baked cookie bars – After you have baked and cooled your bars, place in a freezer safe bag and freeze for up to 3 months. When ready to eat, thaw out on the counter

To freeze unbaked cookie bars – Prepare your batter as directed and place your covered casserole dish straight in the freezer. Once ready to bake, place the cookie bars in your preheated oven and bake for an additional 5 minutes, or until fully baked.
