They’re my go-to dessert whenever I want to make something quick and easy, and the delicious flavor won’t disappoint.

How to Make Cake Mix Cookie Bars
To make these delicious cake mix cookie bars, it’s as simple as 1,2,3!
- Use an electric hand mixer to combine your cake mix, eggs, and oil in a large mixing bowl.
- Gently stir in your mix-ins including chocolate chips, peanut butter chips, and mini M&M’s.
- Spread your batter in a 13×9 Glass Baking Dish with a rubber spatula and bake in the oven until a light golden brown.
Helpful Tips for Spreading Your Batter
The batter for these cake mix cookie bars will be quite thick and it’s a little tricky to spread.
To make it easier to spread, you should definitely use this rubber spatula.
Because it’s non-stick, it smooths out the batter with ease, unlike using a regular spoon.
If you don’t have a rubber spatula, the next best option is to use your hands.
If you use your hands to spread the batter, one little trick is to slightly dampen your hands first, so that it won’t stick to the batter.

Yes! You can freeze both baked and unbaked cake mix cookie bars.
To freeze baked cookie bars – After you have baked and cooled your bars, place in a freezer safe bag and freeze for up to 3 months. When ready to eat, thaw out on the counter
To freeze unbaked cookie bars – Prepare your batter as directed and place your covered casserole dish straight in the freezer. Once ready to bake, place the cookie bars in your preheated oven and bake for an additional 5 minutes, or until fully baked.
Can I Use A Different Kind of Cake Mix?
Yes, I prefer using a yellow or white cake mix for a more blondie style bar, but you can definitely use other cake mix flavors to switch it up. Chocolate, Strawberry, or Lemon would all be delicious – especially paired with different mix-ins!

Ingredients
- 1 (15 oz) box of yellow or white cake mix
- 2 large eggs, beaten
- 1/3 cup olive oil, canola oil, or vegetable oil
- 1/3 cup chocolate chips
- 1/3 cup peanut butter chips
- 1/3 cup miniature M&M’s
- (a few more chocolate chips, peanut butter chips, and M&M’s on top, if desired)
Instructions
- Preheat oven to 350 degrees and grease a 9×13 glass baking dish with non-stick cooking spray.
- In a large glass mixing bowl, combine cake mix, olive oil, and eggs using an electric hand mixer and mix until smooth and combined. The batter will be very thick.
- Gently fold in chocolate chips, peanut butter chips, and miniature M&M’s.
- Spread batter evenly in the dish using a rubber spatula. If needed, slightly wet hands and press until evenly spread.
- If desired, sprinkle the top with a few more chocolate chips, peanut butter chips, and M&M’s.
