My Easy Fudge S’mores Brownies feature a simple graham cracker crust, a rich fudge brownie loaded with chocolate chips, and are topped with toasted miniature marshmallows, chopped up Hershey’s chocolate bars, and crumbled graham cracker pieces.

Add Milk to Brownie Batter
While most boxed brownie mixes instruct you to use water in your batter, one of my favorite ways to make brownies more fudgy is to substitute milk.
You can even use chocolate milk to make them even more chocolatey!
Don’t Over Mix
Over-mixed brownie batter = dry brownies.
To achieve super moist and fudgy brownies, stir the batter until just combined.
I personally like to use my electric hand mixer and blend until there’s still a little bit of dry batter showing.
Then I switch to stirring by hand and gently fold it a couple of times to avoid overmixing.
Don’t Over Bake
Bake and check your brownies at the lowest recommended time and remove when they are still ever so slightly gooey in the middle.
They will continue to cook while they cool, resulting in a delicious fudge-like brownie, which really makes these brownies amazing.
P.S. If you have a new oven or really old oven, make sure you use an oven thermometer to ensure you’re baking at the proper temp and/or adjust baking time as needed.
What’s The Best Brownie Mix to Use?
You can use any brand and type of brownies for this recipe, but I would personally recommend fudge brownie mixes for the best results.

What’s The Best Pan to Bake Brownies In?
I recommend using a non-stick baking pan like this as opposed to glass pans which are easy to over bake them in.
I find these are the best type of pans for ensuring your brownies bake evenly, plus it comes with a lid for easy storing.
How to Cut Brownies Cleanly?
I recommend letting your brownies cool for a minimum of 1 hour and using this knife to cut clean slices of brownies.
Alternatively, you can use a plastic knife or a regular paring knife dipped in hot water to cut even, clean slices.
S’mores Brownies Storage & Heating Instructions
To Store: Let the brownies cool completely before cutting and storing in an airtight container at room temperature.
These brownies will remain fresh for up to 3 days, but are best enjoyed the same day.
To Re-Heat: One of the best things about these brownies is enjoying them when they are slightly warm and gooey.
To reheat, I recommend placing in the microwave and heating for 15-20 seconds or until warm.
How to Make Easy Fudge S’mores Brownies
To make these delicious s’mores brownies, you only need just a few simple ingredients and kitchen tools, which I’ve included below.
RECOMMENDED KITCHEN TOOLS
- 8×8 Brownie Pan with Lid
- Large Glass Mixing Bowl
- Electric Hand Mixer
- Rubber Spatula
- Measuring Cups
- Measuring Spoons
- Parchment Paper
- Wire Cooling Rack
- Brownie Cutting Knife
Recommended Ingredients
- fudge brownie mix
- milk or water
- oil
- large eggs
- graham crackers
- semi-sweet chocolate chips
- mini marshmallows
- Hershey’s milk chocolate bar
Step 1: Preheat Oven and Prepare Crust in Pan
First, preheat the oven and line an 8×8 baking pan with parchment paper, leaving an overhang on the sides.
Next, place 9 graham cracker halves and 6 quarter pieces (for a total of 15) into the bottom of the pan, overlapping slightly if needed.
You can see how I placed them in the photo below. Set aside remaining graham crackers for later.
Step 2: Prepare Brownie Batter
In a large glass mixing bowl, combine the brownie mix, water, oil, and eggs until blended. Do not overmix.
Stir in 2/3 cup of semi-sweet chocolate chips.
Pour batter over the graham crackers in the pan, and spread to ensure all the graham crackers are covered.
Step 3: Bake and Prepare Toppings
Bake for 45-50 minutes or until a wooden toothpick comes out slightly sticky. The brownies will continue to cook slightly while cooling.
While brownies are baking, break the remaining graham cracker halves into small pieces, and chop up Hershey’s bar.
Step 4: Add Toppings and Let Cool
Once brownies have baked, remove from oven, and sprinkle the top of the brownies evenly with the mini marshmallows and graham cracker pieces.
Next, place the brownies back in the oven and broil until the marshmallows are a light golden brown and toasty.
*Make sure you watch carefully as, they can brown very quickly and you don’t want the marshmallows to burn.
Remove from the oven and place on a wire cooling rack.
Immediately top with the chopped up Hershey’s chocolate bar and let brownies cool for 1 hour at room temperature before cutting.
Step 5: Cut and Serve
Once cooled, lift out the brownies and place on a cutting board to cut into 9 even brownie slices (or 12 smaller slices, if desired).
I recommend using this knife for the cleanest cuts possible.

can you put a layer of chocolate chip cookie dough between the crackers and brownie mix?
I haven’t personally tried that so I’m not sure how that might alter baking times, but in theory it should work and also sounds delicious! Let us know if you try it!
