Easy S’mores Cookies Recipe
These easy and delicious s’mores cookies feature a soft graham cracker and sugar flavored cookie with a gooey marshmallow and Hershey kiss on top.
They have all the delicious flavors of a classic s’mores and are just SO cute – perfect for family gatherings or parties.
The best part is these s’mores cookies bake up quick in the oven and are so easy even the kids can help.
My boys loved placing all the Hershey kisses on top once the cookies came out of the oven.

- Use Different Hershey Kisses – For variety, I recommend using different types of Hershey kisses for your s’mores cookies. We love using a mix of milk, dark, and caramel filled ones. It’s delicious and an easy and fun way to switch things up!
- Use Scissors to Cut Marshmallows – I recommend using a pair of kitchen shears to cut the marshmallows quick and easy.
How to Make Easy Hershey Kiss S’mores Cookies

Ingredients You’ll Need
1. Prepare Cookie Dough
Preheat the oven to 350 degrees. Line baking sheets with parchment paper or lightly grease with non-stick cooking spray.
Using an electric handheld mixer beat together the softened butter, sugar, and brown sugar, and mix for 2-3 minutes, until light and creamy. Pour in the graham cracker crumbs and continue mixing until combined.
Add the egg and vanilla extract and mix until incorporated. Lastly add the flour in increments and mix until just combined.
2. Bake Cookies and Prep Toppings
Scoop out tablespoons of dough and roll into smooth, round balls.
Place onto a parchment paper lined baking sheet, 1-2″ apart.
Bake for 8-12 minutes or until edges are a light golden brown.
While cookies are baking cut 10 large marshmallows in half using kitchen scissors or a knife.
Unwrap 20 Hershey kisses and set aside on a plate.
4. Broil Marshmallows and Add Hershey Kiss
Remove the cookies from the oven and gently press a half marshmallow, sticky side down, onto each cookie. Let the cookies cool while you preheat your oven broiler.
Broil cookies for 1-2 minutes until the marshmallows are a light golden brown, keeping a close eye on them so they don’t burn.
Once the marshmallows are broiled to your liking, remove from the oven, and immediately place a Hershey chocolate kiss on top of each cookie.
6. Let Cool and Enjoy
Let cookies cool and then enjoy!

Notes
Flour Substitute: If you don’t have self-rising flour, you can substitute 1 1/4 cup all-purpose flour, 1/2 teaspoon baking soda, and 1/2 teaspoon salt.
Marshmallow Cutting Instructions: Cut marshmallow in half like you would a bun. Kitchen scissors can do this quickly.
Hershey Kiss Varieties: If desired, you can use different types of Hershey kisses for your s’mores cookies. We used a bag that had milk chocolate, dark chocolate, and caramel in them and they were delicious!
Storage – Store leftover cookies at room temperature in an airtight container for up to 4 days.

Can I refrigerate the dough before I bake them? Or will I have a difficult time once they’ve chilled?
Yes, you can chill the dough. In general I always like to chill my cookie dough for at least 1-2 hours, but if you do chill it longer just set it out for 30 minutes before baking so it can come to room temperature for easier handling.
