My youngest son celebrated his 9th Birthday this past weekend, and in addition to making him his requested homemade chocolate baby yoda birthday cake, we celebrated a little early with these delicious and easy funfetti cake mix cookies.
If you’ve never had the pleasure of eating birthday cake cookies, then you pretty much HAVE to make these ASAP – or at the very least for your next birthday celebration.
These birthday cake cookies are soft, chewy, taste just like delicious birthday cake, and are pretty much the prettiest cookies EVER with lots of colorful sprinkles.

They’re perfectly sweet, chewy, and all the colorful rainbow sprinkles make them so pretty and perfect for a birthday party.
I’m a huge fan of cake mix cookies like these because they’re seriously so easy to make and they don’t require a ton of ingredients.
I also love that you can switch up the flavors a million different ways with different cake mixes and add whatever mix-ins you’re craving.

Ingredients Needed for Birthday Cookies
To make these birthday rainbow chip cake mix cookies all you need is a box of funfetti cake mix, eggs, oil, white chocolate chips, and sprinkles.
I think the white chocolate chips taste so delicious combined with the sprinkles, but you could also add in some regular chocolate chips or a combination of the two.
For sprinkles, I recommend using rainbow sprinkle jimmies like these or these Betty Crocker ones. Not only will they look the prettiest, but they have a great texture, and they don’t bleed or get muddled in the batter like other kinds of sprinkles do.

- Funfetti Cake Mix or Party Rainbow Chip Cake Mix
- 2 Large Eggs
- Oil
- White Chocolate Chips (can also sub regular chocolate chips, mini chocolate chips, or do a combination of the two)

Tips for Making Funfetti Cake Mix Cookies
These funfetti cake mix cookies are pretty much one of the easiest cookies you can make, but below I’ve included my best tips for ensuring your birthday cake mix cookies turn out amazing.
Chill Your Dough Before Baking
Cake mix cookie dough is different from regular cookies and quite sticky when you first make it. Instead of immediately throwing them in the oven, let them chill in the fridge for at least 30 minutes to 1 hour.
This makes it easier to roll into balls and will help all your cookies bake up nice and even. It also helps give it that chewy and soft texture that’s so yummy!
Use Parchment Paper
Bake your cookies on pre-cut parchment paper or this silicone baking mat for easy clean up and more even cooking. Using parchment paper pretty much ensures your cookies aren’t going to get burnt on the bottom.
Don’t Overbake Your Cookies
Remove from the oven when the center of the cookie still looks a little bit soft and let cool on the cookie sheet for 5 minutes before transferring to a wire cooling rack. I use this trick with pretty much all my cookies and they always turn out perfectly soft and delicious.
Sprinkle Like You Mean It
If you love rainbow sprinkles and want your cookies to look super pretty, roll the tops of your cookie dough balls in a shallow bowl of colorful sprinkles before baking (like shown in the photo below).
You can also just sprinkle a few on the top if you want a more subtle look. Either way, they’re super pretty and super yummy!

Ingredients
- 1 Box of Funfetti Cake Mix or Party Rainbow Chip Cake Mix
- 2 Large Eggs
- 1/2 cup oil (olive oil, vegetable oil, or canola oil)
- 1 cup White Chocolate Chips (can also sub regular chocolate chips, mini chocolate chips, or do a combination of the two)
- 2 tablespoons Rainbow Sprinkle Jimmies (plus more for the tops of the cookie, if desired)
Instructions
- In a large mixing bowl, combine funfetti cake mix, eggs, and oil and mix with an electric mixer for 1-2 minutes or until combined. The dough will be thick and sticky.
- Next, stir in white chocolate chips and rainbow sprinkles with a spatula or spoon. Let dough chill for 30 minutes – 1 hour before baking.
- Once dough has chilled, roll cookie dough into 1.5 tablespoon size balls and place on a large baking sheet evenly spaced apart.
- Bake in a 350 degree preheated oven for 7-9 minutes.
- Remove from oven when the cookie center is still slightly soft and let cool on the pan for 5 minutes before transferring to a wire cooling rack.
- Serve with a glass of milk and enjoy!
Notes
Store leftover cookies in an airtight container for up to 1 week.
