Hey, lovelies! Are you ready for Thanksgiving? It’s honestly one of my favorite holidays and my favorite part aside from the turkey, mashed potatoes, and gravy, is of course dessert!
And in case you want to make something different from the traditional pumpkin pie this year, I’ve got you covered!
Today I’m excited to share a delicious cookie recipe I’ve been making for my family for years now and the perfect Fall and Thanksgiving dessert – Cake Mix Pumpkin Spice Cookies.

These pumpkin spice cookies are bursting with the delicious flavors of Fall, and are so soft and chewy.

Easy Pumpkin Spice Cookies
To make these pumpkin spice cookies, you only need a handful of ingredients including pumpkin puree, pumpkin pie spice, a yellow cake mix, an egg, oil, and oats.
Combined, all these ingredients make a very flavorful and delicious cookie, and the cake mix, pumpkin, and oats create the most soft and chewy cookie texture.
Even without the glaze on top these cookies are super yummy and crave worthy.
But because we’re all about making things look pretty and taste extra amazing, the cinnamon maple glaze takes it over the top!
The maple, vanilla, and cinnamon all really bring out the flavors in the cookie and perfectly complement the pumpkin.
Plus – it looks super pretty and would look great in your Thanksgiving dessert line-up.

Helpful Tips for Making Cake Mix Pumpkin Spice Cookies
- Don’t overmix the batter. We’ve talked about this before on the blog, but overmixing any batter ends up making it dry. When mixing the wet ingredients in with the dry, fold it together until just combined.
- Use a cookie scoop in lieu of spoons. Years ago I would use spoons to drop the batter onto my cookie sheet, and it was SO time consuming, messy, and the cookies ended up being all different sizes. This cookie scoop set is super affordable and has saved a ton of time/mess.
- Spray the bottom of a glass cup with non-stick spray and gently press on the top of each cookie before baking. This will help the cookie bake more evenly and creates a perfect round shape.
- Use a wire rack with a parchment-lined cookie sheet underneath for glazing your cookies. This will catch any extra glaze and then you can throw the parchment paper away for easy clean-up.
- If you foresee having leftover cookies, don’t glaze them until you are ready to eat. These cookies stay fresh for several days in an airtight container and can easily be glazed 30 minutes to an hour before you are ready to eat.

Ingredients
Pumpkin Spice Cookies
- 1 package yellow cake mix
- 1/2 cup quick oats
- 2 1/2 tsp pumpkin pie spice
- 1 15 oz can 100% pure pumpkin puree (not pumpkin pie filling)
- 1 egg
- 2 tbsp oil (olive, canola, or vegetable oil)
Cinnamon Maple Glaze Icing
- 3/4 cup powdered sugar
- 1/4 tsp cinnamon
- 1/2 tsp vanilla extract
- 1 Tbsp milk
- 1 Tbsp maple syrup
Instructions
- Preheat oven to 350 degrees.
- In a large mixing bowl, combine the yellow cake mix, quick cooking oats, and pumpkin pie spice. In a smaller mixing bowl, combine pumpkin, egg, and oil, and stir until smooth. Add wet ingredients into dry ingredients until just combined.
- Using a medium cookie scoop drop batter onto parchment paper lined baking sheets. Flatten the tops of each with the bottom of a glass cup that has been sprayed with non-stick spray.
- Bake at 350 degrees for 18-20 minutes or until the edges are a light golden brown.
- Place on wire racks to fully cool.
- In a mixing bowl, whisk together powdered sugar, cinnamon, vanilla extract, milk, and maple syrup until smooth. If needed, add additional tablespoons of milk until a thin glaze consistency is reached.
- Dip the tops of each cookie into glaze and place back on wire rack until glaze has set.
Notes
- Store any leftover cookies in a single layer in an airtight container, after fully cool and icing has set. If desired, you can also wait to glaze cookies until ready to eat.
