And when I say these are easy, I mean so easy my 6 year old and 4 year old did most of the work here. I think they did a pretty awesome job, right?

With Thanksgiving upon us, it has me thinking about all the things I’m truly grateful for. I have a great husband who works beyond measure to protect and serve our community and to provide for our family. I have two beautiful boys who light up my world every single time I see them and who always keep me laughing and smiling.

And then of course I have a great job, an even better side job (blogging), friends, family, a roof over my head, food on my table, and more clothes, shoes, and lipstick than any girl could ever possibly need.

To say I’m blessed would be a complete understatement. But I am. I’m so, so blessed.

Making these bars with my two kiddos this past weekend really put some things in perspective for me. We woke up early on Saturday, ate some cinnamon toast waffles while watching an episode of Teen Titans Go, and as I sat there and watched them giggle at the silly antics on the cartoon show, I couldn’t help but think to myself- what a lucky mom I am.

My kids are so happy, always smiling and laughing at the silliest things, but constantly reminding me that that’s what life is all about. It’s about smiling and laughing at the things that make you happy, and enjoying the little things.

When I asked if they wanted to help me make some pumpkin bars, both of them immediately jumped up and said “Yeah!”, and quickly ran to the kitchen to get their stool asking what we needed to do first.

They both loved helping add in all the ingredients to create these delicious and easy pumpkin pie streusel bars.

Description

You’ll love these Easy Pumpkin Pie Streusel Bars made with a yellow cake mix, creamy pumpkin filling, and spices for the perfect flavor combination. These crumb pumpkin bars are perfect for feeding a crowd and are truly yummy! 


Scale

Ingredients

  • 1 package yellow cake mix
  • 1/2 cup butter, melted (1 stick)
  • 1 egg

Filling:

  • 1 can (30 ounces) pumpkin pie filling
  • 1 can (5 ounces) evaporated milk
  • 2 eggs, lightly beaten

Topping:

  • 1/2 cup sugar
  • 1/4 cup all purpose flour
  • 3 teaspoons ground cinnamon

Instructions

  1. Combine cake mix, melted butter, and egg until crumbly. Set aside 2/3 cup for the topping. Press the remaining crumb mixture into a greased 13-in. x 9 in. x 2 in. glass baking dish.
  2. For the filling, combine the pumpkin pie, evaporated milk, and eggs, pouring evenly over the crust.
  3. For the topping, combine the sugar, flour, cinnamon, and the 2/3 cup of crumb mixture. Sprinkle over the pumpkin layer.
  4. Bake at 350 degrees for 45-50 minutes or until the top is golden brown. Once removed from the oven, let cool on a wire rack for 1 hour. Cover and refrigerate for 2 hours before serving.

A yellow cake layer, pumpkin pie filling, and cinnamon sugar crumble topping make these bars the perfect treat for the Thanksgiving holiday. They are super easy and quick to make and will feed a crowd, making them a win-win.

In case you’re wondering I always use this glass dish for making bar recipes and they turn out perfectly every time!

The house seriously smelled so heavenly while the bars were baking! And just saying- it’s completely acceptable to eat a slice for breakfast (not speaking from experience or anything). 😉

So beyond sharing this awesomely delicious recipe with you today that I hope you’ll try making, I also wanted to share a simple reminder.

If we all could only take note from the 4 and 6 year olds in the world, we might could lead a happier life. We might could remember that life isn’t about waiting for the next big thing to happen or anticipating the tomorrows or next weeks.

It’s about living in the moment and just focusing on the here and now.

So that’s what I’ll be doing for the rest of this week. My awesome boss has graciously gave us Wednesday, Thursday, and Friday off, and I fully intend to enjoy every second of it with my family.

I plan to just live in the moment and not worry about what’s happening a week from now, or two weeks from now, or what we’ll be doing during Christmas.

Because we’ll cross that bridge when we get to it, and for now I’m just going to enjoy these moments.

    Awe Cara, you are such a good mommy! I love stepping back during those ‘normal’ routines and just reflecting on how thankful I am. My toddler and little one are finally starting to interact more, and I swear my heart is close to bursting when I see them together!
