Try my Easy No Bake Cookies Recipe made with chocolate, peanut butter, honey, and old fashioned rolled oats for a healthier, classic no bake cookie everyone will love.


Units Scale
  • 1/4 cup unsalted butter
  • 1/2 cup honey (or maple syrup)
  • 1/4 cup unsweetened cocoa powder (natural or dutch process)
  • 1/2 cup creamy peanut butter (can also use almond butter or a seed butter)
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 2 cups old-fashioned rolled oats (or quick oats)


  • First, line a large baking sheet with parchment paper.
  • Next, melt butter in a medium saucepan over medium heat. Add honey and cocoa powder and whisk until smooth.
  • Let mixture come to a rolling boil, and once it is continuously bubbling throughout, set a timer for 1 minute, and do not stir.
  • After boiling for 1 minute, remove from heat, and immediately stir in peanut butter, vanilla extract, and salt. Mix until smooth and creamy. Add in oats and stir until evenly combined and the oats are fully coated.
  • Use a small cookie scoop or spoon and drop cookies onto the parchment paper lined cookie sheet. Depending on what size scoop/spoon you use, this recipe makes enough for 16-24 no bake cookies.
  • Use the bottom of a glass or measuring cup to flatten the cookies slightly.
  • Place cookie sheet directly into the fridge to chill for 30 minutes to 1 hour before serving.
  • Once cookies have set up, serve and transfer any leftover cookies to an airtight container, and refrigerate. Cookies will remain fresh for up to 2 weeks stored in the fridge, or can be frozen as directed in notes below.

To Freeze: No bake cookies can easily be frozen in a freezer-safe bag or container for up to 3 months. Once ready to eat, let cookies thaw in the fridge overnight or at room temperature until thawed.
