Mini Pepperoni Pizza Muffins

These Easy Mini Pepperoni Pizza Muffins are made with refrigerated pizza dough, pepperoni, cheese, pizza sauce, and Italian seasoning. Make these delicious pizza muffins in less than 20 minutes!

  1. Preheat oven to 425ºF.
  2. Spray 24 mini muffin cups with non-stick cooking spray
  3. Roll out pizza dough and spread evenly. Use a pizza cutter to cut the dough into 24 even squares. I find it easiest to cut it in half sections lengthwise, then half  each of those sections. Repeat in the opposite direction. Press each square into the sprayed muffin cups, gently pushing the middle down with your fingers.
  4. Next, use a knife to dice the pepperoni slices into small cubes, working in small sections. Add 1/4 cup marinara sauce to a bowl and mix with the diced pepperoni. In another bowl, add 1/2 cup of shredded mozzarella cheese and 1/2 cup of shredded cheddar or Colby jack cheese. Mix together with your hands until evenly combined.
  5. Use a 1/2 tsp measuring spoon and add the pepperoni and sauce mixture to each muffin cup. Next, top with the shredded cheese. We love using a blend of mozzarella and Colby jack but you can use any kind you prefer. If desired, sprinkle Italian seasoning on top.
  6. Bake in the oven for 10-12 minutes or until the muffin cups are a light golden brown. Let the muffin cups cool in the pan for 5 minutes before removing.
  7. Serve the pizza muffins with marinara sauce or ranch and enjoy!
