Try my Mamaw’s Easy Porcupine Meatballs Recipe for a delicious and simple dinner the whole family will love. It’s made with ground beef, rice, simple seasonings, and a flavorful tomato sauce that pairs perfectly with mashed potatoes.

Instructions

  • First, rinse and soak rice in a bowl of water for 15-30 minutes. This helps ensure the rice fully cooks to tender.
  • In a large mixing bowl, add 1 lb of lean ground beef and 1/2 cup of uncooked, pre-soaked long grain white rice.
  • Next add in 3/4 tsp sea salt, 1/2 tsp garlic powder, 1/2 tsp Italian seasoning, 1/4 tsp ground black pepper, 1/4 cup finely diced onion, 1 tbsp Worcestershire sauce, and 1/2 cup of beef broth.
  • Use a fork and stir until evenly combined. 
  • Next, preheat the oven to 350 degrees F and spray a 9×13 baking dish with non-stick cooking spray. 
  • Use your hands and form 24 meatballs and place them in the baking dish. 
  • Next, pour a 25 oz jar of tomato sauce over the meatballs. Use a spoon and spread evenly, ensuring all the meatballs are covered. 
  • Cover tightly with aluminum foil and bake 45 minutes covered, and 15 minutes uncovered. 
  • Serve with mashed potatoes and enjoy!

Notes

  • Cover and store leftovers in the fridge for up to 3 days. This dish can also be frozen up to 3 months. 
  • If you prefer to make these the old fashioned way with Campbell’s Condensed Tomato Soup, you will need to use 1 family size can and increase the water in the recipe to 1 cup.
