Easy Porcupine Meatballs

If you’ve never tried porcupine meatballs, you’re in for a treat!

As a child, I used to love to eat these at my Mamaw’s house and they’re absolutely delicious.

These porcupine meatballs are made simple with ground beef, rice, seasonings, and a flavorful tomato sauce. They’re one of my favorite comfort foods and these meatballs pair perfectly with a side of creamy mashed potatoes and green beans. 

Cara’s Tips:

  1. Pre-Rinse + Soak Your Rice – Through trial/error I learned that rice when added in dry can sometimes have issues with not cooking to tender. The fix is simple! Rinse your rice and let it soak in a bowl of water for 15-30 minutes while you’re gathering up and prepping your other ingredients.
  2. Old-Fashioned Version – If you prefer a sweeter meatball flavor, swap out the jarred tomato sauce for Campbell’s condensed tomato soup. Growing up my Mamaw always used this ingredient and it tastes delicious too! (see printable recipe for instructions)
  3. Serving Ideas – You can never go wrong pairing these porcupine meatballs with creamy mashed potatoes and green beans. It’s a classic combo!

How to Make Porcupine Meatballs

Ready to learn how to make porcupine meatballs? Below you’ll find a list of all the kitchen tools I use/recommend in this recipe.

1. Combine Meatball Ingredients

First, rinse and soak rice in a bowl of water for 15-30 minutes. This helps ensure the rice fully cooks to tender.

In a large mixing bowl, add lean ground beef and the pre-soaked, uncooked long grain white rice.

Next add in sea salt, garlic powder, Italian seasoning, ground black pepper, finely diced onion, Worcestershire sauce, and beef broth. Use a fork and stir until evenly combined.

2. Form Porcupine Meatballs

Next, preheat the oven to 350 degrees F and spray a 9×13 baking dish with non-stick cooking spray. 

Use your hands and form 24 meatballs and place them in the baking dish.

3. Cover with Sauce and Bake

Next, pour a jar of tomato sauce over the meatballs. Use a spoon and spread evenly, ensuring all the meatballs are covered. 

Cover tightly with aluminum foil and bake 45 minutes covered, and 15 minutes uncovered.

4. Serve and Enjoy

Serve with mashed potatoes and enjoy!

  • In a large mixing bowl, add 1 lb of lean ground beef and 1/2 cup of uncooked, pre-soaked long grain white rice.
  • Next add in 3/4 tsp sea salt, 1/2 tsp garlic powder, 1/2 tsp Italian seasoning, 1/4 tsp ground black pepper, 1/4 cup finely diced onion, 1 tbsp Worcestershire sauce, and 1/2 cup of beef broth.
  • Use a fork and stir until evenly combined. 
  • Next, preheat the oven to 350 degrees F and spray a 9×13 baking dish with non-stick cooking spray. 
  • Use your hands and form 24 meatballs and place them in the baking dish. 
  • Next, pour a 25 oz jar of tomato sauce over the meatballs. Use a spoon and spread evenly, ensuring all the meatballs are covered. 
  • Cover tightly with aluminum foil and bake 45 minutes covered, and 15 minutes uncovered. 
  • Serve with mashed potatoes and enjoy!

Notes

  • Cover and store leftovers in the fridge for up to 3 days. This dish can also be frozen up to 3 months. 
  • If you prefer to make these the old fashioned way with Campbell’s Condensed Tomato Soup, you will need to use 1 family size can and increase the water in the recipe to 1 cup.
