These Easy Chicken Taco Pinwheels are the perfect appetizer or snack for your next party or tailgate! Made with simple ingredients, these Mexican chicken pinwheels are delicious, flavorful, and a total crowd-pleaser.

Instructions

  1. First, use a knife and thinly slice your green onions. Next shred or chop your cooked chicken. I used a rotisserie chicken and finely diced it into bite sized pieces. 
  2. In a large bowl, add the cream cheese and use a fork to break it apart. Next add taco seasoning and Rotel and stir until combined. Next add in the shredded chicken and stir until combined. Lastly add in the shredded cheese, and chopped green onion. Mix together until all ingredients are fully combined.
  3. Add 1/2 cup of the mixture onto a burrito sized tortilla. Use an angled spatula and spread the mixture evenly over the entire surface, being careful to not overfill it. Roll the tortilla up tightly and repeat the process with the remaining tortillas for a total of 6 roll ups. 
  4. Cover with plastic wrap or place in an airtight container and refrigerate for at least 30 minutes before cutting.
  5. After the roll ups have chilled, use a sharp knife to first cut away the excess on the ends, then gently slice each log into 6-8 slices each, being careful to not press down too hard.
  6. Place your taco pinwheels on a plate, serve and enjoy!
