For pairing with the fresh celery and carrots, I also picked up a packet of ranch seasoning and light sour cream for a healthier dip. It’s a nice way to add flavor when eating fresh veggies without going overboard on the calories! For serving, I put everything on an adorable football tray, which is the perfect touch to any game day party!

For the shredded chicken used in this recipe, I seasoned the chicken breast with salt and pepper, drizzled lightly with olive oil, and threw in the crock pot for 3 hours on low. This gets the chicken nice and tender, and makes shredding a breeze!

  7. These look so good and so simple! I’ve never made pinwheels before, but I have a recent obsession with cream cheese so I’ll have to try these out. Do they keep in the refrigerator? There’s only the two of us, so I doubt we could eat them all. (doubtful, but possible) Thanks for sharing!

    1. Thank-you! And yep they last in the refrigerator for 3-4 days after making them. If you’re just making for two you could also cut the recipe in half! ๐Ÿ™‚

  8. Lovely post!

  11. That’s so neat!
I like to make pinwheels myself when I have a larger group of guests over. It’s perfect for appetizers. I have yet to try them with chicken.

  12. Great recipe. I like to cook the chicken in the crockpot too, I would make this a day ahead, refrigerate overnight if the game day is going to be super busy with friends coming over. Pinning so I can refer back to this one!

    1. Thank-you! Yes refrigerating overnight is a great idea, plus I think it helps all the flavors to combine beautifully! ๐Ÿ™‚

  13. I disagree with you friend, traditional tailgating food is the best! Lol! But I guess I will have to try this lightened up version to give myself a healthier version of my normal go-tos because the football season is long and I need to be eating better!

    1. Haha don’t get me wrong I love a good cheat meal every now and then, but when I overdo it with tailgating foods, I always feel really guilty and bad afterwards lol. Trying to be better about staying on track! ๐Ÿ˜‰

  14. Yummy!! I love how easy this recipe is. This looks like a great mix of flavors and it can be adjusted to your own taste.

  15. Ive never heard of save a lot. we def dont have that here. BUT I love this recipe. Always looking for new variations on tacos and i find pinwheels are a great thing to bring on a picnic or to to the beach.

  16. This looks super yummy…I would love a bite. I’ll try it soon, though the bill for those ingredients would be higher down here!!

  17. These sound delicious and so perfect for a tailgate snack! I love that they’re skinny too, I always eat so bad starting this time of year so this is a great alternative! <3, Pamela Sequins & Sea Breezes

    1. Thank-you! It can be so easy to over eat or over indulge during f-ball season, so that’s why I wanted to do something a little lighter. ๐Ÿ™‚

  18. What a yummy recipe- so perfect for football season. We love hosting friends for the games, so this would be awesome. Thanks for the great recipe!

  19. I would have to double the batch because these would be gone fast. Nice to have something else other than the BBQ and heavy stuff all the time.

  20. What a fabulous combination of flavors! I’m going to make this on Saturday for our college football fun! Great recipe lady!
