But one thing I don’t love is all the greasy tailgating food, which is why I’ve teamed up with Save-A-Lot today to share one of my favorite easy and healthy recipes- Skinny Chicken Taco Pinwheels! They’re the perfect light snack for tailgating, oh so delicious, and super simple to make.

These Skinny Chicken Taco Pinwheels are super delicious and packed full of flavor that you won’t be able to resist! Even better this no-fuss recipe is easy to whip together and will have you enjoying tailgating time with your family and friends in no time!

To make them, you need only a few simple ingredients including lean, boneless-skinless chicken breast, light cream cheese, green onions, diced tomatoes with jalapenos, shredded cheddar cheese, burrito sized flour tortillas, and taco seasoning.

And now for the recipe! These pinwheels are so easy to put together and you truly do get the full flavor of chicken tacos in them! I mean is there anything better?!

For the shredded chicken used in this recipe, I seasoned the chicken breast with salt and pepper, drizzled lightly with olive oil, and threw in the crock pot for 3 hours on low. This gets the chicken nice and tender, and makes shredding a breeze!

Description

These Skinny Chicken Taco Pinwheels are the perfect appetizer for any tailgating party! Make this lighter version for less calories with all the flavor!


Ingredients

Scale
  • 1 8 oz package light cream cheese
  • 1 cup shredded Mexican cheese
  • 1 1/2 tbsp taco seasoning (light sodium preferred)
  • 1 1/2 cups shredded chicken
  • 1 (10-ocan diced tomatoes with green chilies (well drained)
  • 1 cup green onions (thinly sliced)
  • 5 burrito sized tortillas

Instructions

  1. In a large bowl, combine all of the ingredients until well blended.
  2. Spread about 1/3 cup of the mixture evenly over the entire surface of a tortilla, being careful to not overfill. Roll up tightly. Repeat with remaining tortillas.
  3. Cover with plastic wrap and refrigerate for at least 30 minutes or until firm. This will make them easier to cut.
  4. Carefully slice into 1/2 inch slices with a sharp knife.
