I love making them for parties because they’re easy to make ahead of time and they’re inexpensive, requiring only a few simple ingredients. 

But to be honest – I also love making them for a quick + simple lunch when I’m short on time and tired of my usual lunches.

  • Simple Ingredients – There’s no complicated ingredients in this recipe – most you’ll probably already have on hand!
  • Make Ahead – These are great to make ahead of time and they store nicely in the fridge for several days.

Cara’s Tips:

  1. Use Rotisserie Chicken – To save time, pick up a rotisserie chicken from your grocery store. They’re so flavorful and make this recipe even easier to prepare.
  2. Soften the Cream Cheese – I recommend letting the cream cheese set at room temperature for about 30 minutes or so ahead of time to soften. This makes it much easier to blend with the rest of the ingredients.
  3. Add Some Spice – If you like your food with a bit of a kick, swap the mild Rotel for Hot Rotel or add in 1/8- 1/4 tsp of cayenne pepper with your taco seasoning.
  4. Swap The Tortillas – If desired you can use low carb, high fiber, or whole grain tortillas to make these pinwheels even healthier.
  5. Serve with Veggies and Dip – We love to pair these alongside veggies such as carrots and celery. They also pair perfectly with these lightened up dips recipes: Buffalo Chicken Dip and Spinach Artichoke Dip.

Instructions

  1. In a large bowl, combine the light cream cheese, taco seasoning, and Rotel. Next add in the shredded chicken, cheese, and green onion. Mix together until all ingredients are fully combined.
  2. Use an angled spatula and spread about 1/2 cup of the mixture evenly over the entire surface of a tortilla, being careful to not overfill. Roll up tightly and repeat the process with remaining tortillas.
  3. Cover with plastic wrap or place in an airtight container and refrigerate for at least 30 minutes before cutting.
  4. After they’ve chilled, use a sharp knife and gently slice each log into 6-8 slices each, being careful to not press down too hard.
  5. Serve and enjoy!

Store leftovers in an airtight container for up to 5 days

  1. These look so good and so simple! I’ve never made pinwheels before, but I have a recent obsession with cream cheese so I’ll have to try these out. Do they keep in the refrigerator? There’s only the two of us, so I doubt we could eat them all. (doubtful, but possible) Thanks for sharing!

  3. Great recipe. I like to cook the chicken in the crockpot too, I would make this a day ahead, refrigerate overnight if the game day is going to be super busy with friends coming over. Pinning so I can refer back to this one!

  4. I disagree with you friend, traditional tailgating food is the best! Lol! But I guess I will have to try this lightened up version to give myself a healthier version of my normal go-tos because the football season is long and I need to be eating better!

    1. Haha don’t get me wrong I love a good cheat meal every now and then, but when I overdo it with tailgating foods, I always feel really guilty and bad afterwards lol. Trying to be better about staying on track! 😉
