If there’s one food that my whole family loves to eat, it’s definitely pizza.

On the weekends, we frequently enjoy having pizza and movie nights and when we’re not ordering out, we love to make these Easy Pepperoni Cheese Stuffed Pizza Bites homemade.

These delicious cheese stuffed pizza bites are made simple with homemade or canned pizza dough, mozzarella sticks, pepperoni, lightly brushed with olive oil, and topped with garlic, herbs, and sprinkled Parmesan.

They bake to a golden, cheesy perfection in just 12-15 minutes and they’re so good you might want to make a double batch!

The great thing about this cheese pizza bites recipe, is it can easily be adjusted for you and your family’s preferences.

We love switching up the flavors from time to time, and it’s a great way to involve the kids with cooking.

 

Pizza Dough – This recipe can be made with canned pizza dough, homemade pizza dough, biscuit dough, or crescent roll dough. I prefer using this easy homemade dough.

Cheese – Mozzarella is a classic pizza choice, but feel free to use your favorite cheese instead. Colby & Monterey Jack, Cheddar, Pepper Jack, or Gouda would all be yummy!

Meat – Don’t like pepperoni? Feel free to substitute or mix and match with sausage, ham, grilled chicken, meatballs, or bacon.

Veggies – To make these stuffed pizza bites more wholesome, you can add in onion, peppers, diced tomato, or mushrooms.

Yes! Our family used to use canned pizza dough for this recipe, but we now prefer to make it using our delicious and easy 2-Ingredient Pizza Dough.

It only takes just a few minutes to make, and is WAY better than canned.

You’ll need a half batch of this recipe, or you can easily double this recipe for the full batch.

 

Can I use biscuits or crescent rolls for stuffed pizza bites?

Yes, you can, although the taste and texture will be slightly different.

You will also probably need to adjust the baking times, as indicated below.

 

Can you bake the pizza bites in a different pan?

Yes! These pizza bites are versatile and can be made several ways.

 

How to Make in a Muffin Pan:

Grease a 12 count muffin pan, place 2 stuffed pizza bites in each tin, and bake in the oven for 9-12 minutes, or until a light golden brown.

How to Make on a Baking Sheet: 

Place stuffed pizza bites evenly spaced apart on a large, parchment paper-lined baking sheet.

Bake in the oven for 8-10 minutes, or until they are a light golden brown.

These pizza bites always go quick in our house and we rarely have leftovers, but in case you do, store leftover pizza bites in an airtight container in the fridge for up to 4 days.

To reheat, place in the microwave for 30 seconds at a time, until warm and the cheese has melted.

How to Make Pepperoni Cheese Stuffed Pizza Bites

Step 1:

To make these pepperoni cheese stuffed pizza bites, start by preheating the oven to 400 degrees and spraying a round, glass baking dish or cake pan with non-stick spray.

Step 2: 

Unwrap 8 mozzarella string cheeses and use a pizza cutter  to cut each one into thirds, and each third into smaller pieces, if desired. The cheese will melt inside and create an ooey gooey center that’s delicious!

Step 3: 

Next, spread your homemade or canned pizza dough on a large cutting board or baking sheet.

Use a pizza cutter and cut the crust into 24 even pieces.

Cutting tip: To get as even pieces as possible, I’ve found it’s easiest to make three cuts long-ways, then cut in half horizontally, then cut each halve three ways, giving you 24 pieces total.

Place a pepperoni on each piece.

Next top with the string mozzarella cheese pieces.

I prefer cutting the string cheese into smaller pieces, as it melts easier, and it makes it easier to form into the pizza balls.

Stir together the seasonings and shredded Parmesan and combine with the olive oil.

Use a basting brush to spread evenly on top of the cheese stuffed pizza bites and place in the oven and bake for 10-12 minutes or until the pizza bites are a light golden brown.

    1. Hi Donna – you can use any pan you like, just as long as you can bake the pizza bites alongside one another. I prefer using a round glass dish or round cake pan, but feel free to use whatever you have on hand. Enjoy!

  1. I made these and they tasted great. Unfortunately the initial learning curve on getting 24 equal squares of dough took a fairly long time. I hope next time i can do it quicker

    1. Thanks, Sherri! I also struggled with this initially, but found it’s helpful to cut it in half long ways, then cut both those pieces in half as well. Then cut it in half horizontally, and then divide both those halves into three even horizontal cuts, giving you a total of 24 even pieces. (Sorry if that sounds confusing, it’s easier to show it). I’ll be adding a video to this post soon and might also update with a better visual guide for this part. Also, using a pizza cutter definitely helps make it quicker vs. a knife.

  2. I love these! In haste, I grabbed crescent sheets and didn’t catch it until it was too late. I dropped back and threw a hail-Mary into the mini muffin tins and scored the TD! These shall live in my “go-to” file for sleepovers and late night snacks!
