Pepperoni Pizza Lasagna Roll Ups

If there’s one food item out there that I undoubtedly believe I could eat every single week for the rest of my life, it would be pizza.

But not just any plain ol’ pizza of course. Ooey gooey, cheesy, pepperoni pizza with delicious herbs and tomato sauce.

My kids are also huge pizza fans and frequently request my Cheese Stuffed Pizza Bites, Homemade Stromboli, and Pepperoni Pizza Muffins.

But you see the hubs unfortunately hasn’t yet hopped on my bandwagon of “Let’s eat pizza every week for dinner”, and instead almost always demands some sort of pasta dish-  namely lasagna.

So to compromise, I discovered a recipe that makes us both happy and is undeniably delicious and easy to make- Pepperoni Pizza Lasagna Roll Ups.

Made with lasagna noodles, pepperoni, marinara sauce, and ooey gooey mozzarella cheese, these pepperoni pizza lasagna roll ups have come to be a family favorite and has all the tasty flavors of pizza in a pasta dish.

Even better, this dish is one of my favorite, week-night meals and can easily be made ahead of time, popped in the fridge or freezer, and warmed up in a flash.

Pepperoni Lasagna Roll Ups are SO easy to make.

Start by boiling your noodles in a large pot until they are tender, but don’t overcook them or else they’ll fall apart when you start assembling. 

To assemble: 

Start by laying out noodles on a clean flat surface (I like to use either this cutting board or large baking sheet) and prepare your cheese filling.

Use a small cookie scoop and spoon out 1 scoop of ricotta cheese mixture onto each lasagna noodle.

Use an offset spatula or spoon to spread evenly on each noodle. 

Place 8-10 pepperoni slices on each noodle on top of the ricotta cheese mixture.

Now it’s time to make your lasagna roll ups!

Carefully roll up the lasagna noodles tightly and place each roll up seam side down in a 13×9 glass baking dish that has been sprayed with non-stick spray and had a small amount of sauce added to the bottom.

Adding a little bit of sauce helps prevent your lasagna roll ups from sticking to the pan, and the noodles soak up the sauce while baking.

Top off the pepperoni pizza lasagna roll ups with the remaining tomato sauce left in your jar and spread evenly with a spoon.

  • Store leftovers covered in the refrigerator for up to 1 week. To reheat, place individual servings in the microwave for 30 seconds-1 minute or until warm. You can also place the entire casserole in the oven and bake at 350 for 10 minutes. 
  • These lasagna roll ups are great for making ahead and freezing! Freeze baked lasagna roll ups in a freezer safe container for up to 3 months.  To reheat, bake unthawed in a 350 degree oven for 2 hours, or thaw overnight and bake for 20 minutes.

Description

Made with lasagna noodles, pepperoni, marinara sauce, and mozzarella cheese, Pepperoni Pizza Lasagna Roll Ups are a delicious and easy weeknight meal favorite and perfect for family dinner!


Ingredients

Scale
  • 16 lasagna noodles (cooked until tender (be careful not to overcook or they will fall apart))
  • 1 24- ounce jar of marinara sauce (any flavor)
  • 1 15- ounce container of ricotta cheese
  • 22 1/2 cups shredded mozzarella cheese
  • 1 6- ounce package pepperoni slices
  • 1/2 tsp. Onion Powder
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Italian Seasoning
  • optional: fresh parsley

Instructions

  1. Start by boiling your noodles in a large pot until they are tender, but don’t overcook them or else they’ll fall apart when you start assembling. Drain and set aside.
  2. Preheat oven to 350 degrees. Lightly spray a 13×9 glass baking dish with cooking spray.
  3. Spread an even layer of pizza sauce in the bottom of the dish.
  4. Lay your lasagna noodles out on a large cutting board or or large baking sheet.
  5. In a medium bowl combine ricotta cheese, onion powder, garlic powder, and italian seasoning and mix until smooth.
  6. Use a small cookie scoop and spoon out 1 scoop of ricotta cheese mixture onto each lasagna noodle. Use an offset spatula or spoon to spread evenly on each noodle.
  7. Lay about 8-10 pepperoni slices along the length of the noodle on top of the ricotta cheese mixture. Carefully roll up the noodles tightly and place seam side down in your prepared baking dish.
  8. Pour remaining pizza sauce over the rolls. Sprinkle shredded mozzarella cheese on top.
  9. Bake for 15-20 minutes in oven until cheese is completely melted, and it is a bubbly light golden brown.
  10. Sprinkle with fresh parsley or more Italian seasoning if desired and serve with my incredible cheddar garlic biscuits and salad for a delicious meal!
