One of our family’s personal favorites is my Easy Ground Beef Stroganoff with Cream of Mushroom Soup.
My Easy Ground Beef Stroganoff with Cream of Mushroom and Hamburger features a delicious and creamy hamburger stroganoff sauce made with light sour cream, cream of mushroom soup, beef broth, seasoned lean ground beef, and is served with tender egg noodles.
It’s a quicker and lightened up version of classic beef stroganoff and can easily be doubled (or tripled) for yummy leftovers to eat throughout the week.
This easy ground beef stroganoff is also very affordable to make requiring only a few ingredients you probably already have in your pantry and fridge.

Easy Ground Beef Stroganoff with Cream of Mushroom Soup & Hamburger
Beef Stroganoff is one of those classic, comfort meals that is just so delicious to enjoy with the family.
But I’ll be honest, I don’t want to spend an hour or more in the kitchen on a busy weekday, which is why I love this easy ground beef stroganoff recipe SO much!
Even better, this ground beef stroganoff recipe cuts down on the calories, fat, and sodium content by using lighter ingredients like sour cream instead of heavy whipping cream, low sodium beef broth, and adding in our own seasonings as opposed to using packet seasonings that are loaded with a ton of salt.
I personally would also recommend adding in fresh mushrooms, diced onion, and minced garlic, which really amps up the flavor and nutrition.
I unfortunately have a family full of picky eaters who won’t eat mushrooms which is why I didn’t include it, but me?
I LOVE mushrooms and they really taste wonderful in this ground beef stroganoff.

- Low-Sodium Beef Broth

What can you use instead of sour cream in beef stroganoff?
If you don’t have any sour cream or just don’t like it, I recommend using plain Greek yogurt instead.
It’s another healthier alternative to heavy cream and will make the pasta nice and creamy.
What is stroganoff sauce made of?
This beef stroganoff sauce is made with melted butter, flour, beef broth, cream of mushroom soup, and sour cream.
How do you make stroganoff seasoning?
The seasoning is super simple! All you need is salt, pepper, onion powder, garlic powder, and if desired, a touch of paprika for a little kick.
How can I add more flavor/nutrition to beef stroganoff?
This recipe is absolutely delicious as written, but if you want to amp up the flavor and nutrition, feel free to add some more spices, herbs, and your favorite vegetables.
Below are just a few ideas:
- Add in 1-2 tsp of dijon mustard for an extra kick
- Add a sprinkle of smoked paprika or a few dashes of hot sauce for a spicier beef stroganoff
- Top with fresh or dried thyme, parsley, or Italian seasoning
- Add some chopped cooked bacon for a smokier flavor
- Add mushrooms, onions, zucchini, peppers, and/or mixed veggies
Can I use ground turkey or ground chicken instead of hamburger beef?
This dish is best with ground beef, but feel free to use whatever you have on hand.
If you use ground turkey or ground chicken it will change the flavor, but it will still be delicious, and would actually make it a bit healthier since those are lean proteins.

Tips for Making Ground Beef Stroganoff with Cream of Mushroom Soup
How to Avoid Curdled Stroganoff
Sour cream will curdle if your dish is too hot. To avoid this, remove from heat first and let the sauce cool for 1-2 minutes.
I like to place mine on a wire cooling rack. Once it has cooled slightly, stir in the sour cream slowly and season to taste.
How to Thin Too Thick Sauce
If your stroganoff sauce is too thick, you can always thin it down by adding in 1/4 cup of beef broth (or water), stirring, and continuing to add more liquid as needed.
How to Store Ground Beef Stroganoff
Store any remaining leftovers in an airtight container in the fridge for up to 5 days.
Re-heat individual servings in the microwave for 30 second intervals until warm.
Step-By-Step Easy Ground Beef Stroganoff Recipe:
Step 1: Start by bringing a large pot of water to boil and cook your egg noodles according to the package instructions.
Step 2: While your noodles are boiling, begin browning your ground beef over medium heat in a large cast iron skillet until the beef is fully cooked and no pink remains.
I like leaving larger chunks of meat here, but feel free to break it up into smaller pieces if desired.
Also – if you plan to add in fresh mushrooms and diced onion, go ahead and add them in with the ground beef and sauté them until everything is cooked. Drain beef and set aside.
Step 3: Now it’s time to start making your hamburger stroganoff sauce.
Using the same skillet as before, begin melting butter in the pan over medium heat. Once melted, add flour and stir until combined.
Using a large whisk, add in beef broth and begin stirring vigorously to remove lumps.
Turn the heat up to high and bring to a boil for 2-3 minutes until the sauce has thickened.
Step 4: Lower heat to medium and add the cream of mushroom soup, stirring until combined. Remove from heat and let cool for 1-2 minutes.
Once sauce has slightly cooled, stir in sour cream slowly and season to taste.
I love adding salt, pepper, garlic powder, and onion powder, and if I want a little kick will sometimes add some paprika.
Once you’ve seasoned it to perfection, re-add the cooked ground beef, stir, and let simmer on low heat for 5 minutes.
Step 5: Add your drained noodles to the pan and stir until well combined.
If desired, top with fresh parsley and enjoy!

I made this, excluding sour cream. Once I added meat and noodles there wasn’t enough sauce to coat noodles. If I make it again I will use 2 cups of broth and maybe use less noodles. Also, I will add chopped onions and fresh minced garlic to give more flavor than the dry stuff.

You did not tell us how large of a package of noodles to use. I do not buy packaged noodles, I make my own from scratch. I will need to know the weight of the package of noodles that you use in this recipe so I can convert That weight to the weight needed for homemade noodles. It’s normally an increased by 50%.

How much noodles do you use?
I personally always make the full bag and add the noodles in a little at a time until I get the desired noodle to sauce ratio, and use any leftover noodles for another pasta dish. If I had to estimate though, you could probably make between 1/2-3/4 bag of egg noodles. I’ll try to pay attention next time I make it and update it accordingly.
Is there anything I could use in place of the cream of mushroom?
Yes, you can use any cream soup mix such as cream of chicken or cream of celery.
