Triple Peanut Butter Oatmeal Bars

Baked triple peanut butter oatmeal bars are thick, soft, chewy, and delicious with triple the peanut butter flavor! Easy to make in just 30 minutes time!

Peanut Butter Oatmeal Bars

  • 1/2 cup butter (softened to room temperature)
  • 1/4 cup sugar
  • 1/3 cup brown sugar (packed)
  • 1 large egg
  • 1/2 tsp vanilla
  • 1/3 cup creamy peanut butter
  • 1 cup self-rising flour ((can also substitute all-purpose flour, just add 1/4 tsp salt and 1/2 tsp baking soda))
  • 1 cup old fashioned oats (or quick oats)

Peanut Butter Streusel

  • 1/4 cup self rising flour
  • 1/4 cup brown sugar (packed)
  • 2 tbsp butter (softened to room temperature)
  • 1 1/2 tbsp peanut butter

Peanut Butter Drizzle

  • 1/3 cup powdered sugar
  • 1/4 cup peanut butter
  • 13 tbsp milk (add 1 at a time, and additional milk may be added until drizzle consistency is reached)

Instructions

Peanut Butter Oatmeal Bars

  1. Preheat the oven to 350 degrees F and line an 8×8 baking dish with parchment paper or spray with non-stick cooking spray.
  2. First use an electric hand mixer and cream together butter, sugar, and brown sugar until combined. Add the egg, peanut butter, and vanilla, and mix until well combined.
  3. Next stir in the oats by hand until evenly incorporated. Lastly, stir in the flour by hand until just combined, being careful to not overmix.
  4. Spread batter in a prepared 8×8 baking pan.

Peanut Butter Streusel

  1. In a small mixing bowl, combine the flour, brown sugar, peanut butter, and softened butter to make the streusel. Mix until a crumbly consistency is reached, but do not overmix. Sprinkle evenly over top the peanut butter oatmeal bars batter.
  2. Bake at 350 degrees for 25-28 minutes until bars are lightly golden.
  3. Remove bars from oven and let cool for 15-30 minutes before adding the peanut butter drizzle over the bars.

Peanut Butter Drizzle

  1. While the peanut butter oatmeal bars are baking, use a whisk and combine powdered sugar, peanut butter, and milk in a small bowl. Add milk in 1/2 tbsp at a time until a drizzling consistency is reached. Place in the fridge until ready to use.
  2. For an easy mess-free drizzle, place peanut butter drizzle in a decorator’s bag or Ziploc bag with the corner snipped off, and drizzle as desired.
  3. Let bars set for 10 minutes before cutting, then serve and enjoy!
  4. Store remaining peanut butter oatmeal bars in an airtight container at room temperature for up to 5 days.
