Summer break has officially ended, which means the kids are unfortunately back in school and I’m back to work. 

While I wish we could all still be lounging on a tropical island somewhere, today’s treat is the perfect pick-me-up. 

Today I’m sharing how to make my Delicious and Easy Pineapple Coconut Bread which is my favorite go-to dessert when I want to feel like I’m still on a tropical vacation. 

It’s made quick and simple with a boxed cake mix and is SO good!

I made this pineapple bread just last weekend and it was a huge hit in the Owens’ Household.

The addition of crushed pineapple with juice makes it so moist and the hint of spice from the cinnamon really brings out all of the delicious flavors making it the perfect dessert.

How to Make Pineapple Coconut Bread

1. Prepare Cake Batter

Preheat oven to 325 degrees F and spray two loaf pans with non-stick cooking spray. 

In a large bowl, combine the cake mix, crushed pineapple, evaporated milk, eggs, and cinnamon.

Use an electric hand mixer and beat on medium-high speed until batter is smooth and combined.

Stir in coconut and pour evenly into the two greased loaf pans.

2. Bake and Let Cool

Bake for 45-50 minutes or until a toothpick inserted near the center comes out clean.

Let cool in the pan for 10 minutes, before transferring loaves to a wire cooling rack to cool further.

3. Prepare Glaze and Toast Coconut

While the loaves cool, prepare your glaze by combining powdered sugar and milk in a bowl and whisking together until smooth. Set aside.

Next, turn on your oven’s broiler and spread a thin layer of coconut on a large cookie sheet.

Broil in the oven until the coconut is toasted and golden, being careful to not burn. Once it starts turning a light brown color, remove from oven.

4. Top with Glaze and Shredded Coconut

Next, use a spoon to drizzle the glaze over the loaves.

Storage and Freezer Instructions

Store leftovers in an airtight container at room temperature for up to 3 days.

Let cool completely and freeze bread for up to 3 months, either individually or as a whole loaf as follows.

  • Individual: wrap individual slices in saran wrap and place in a freezer-safe bag or container.
  • Whole loaf: wrap with saran wrap, then aluminum foil, and place in a freezer-safe bag or container. Once ready to eat, thaw in fridge overnight and re-heat individual slices in the microwave.

  1. Cara, will this bread be just as good if I use a skim or no-fat milk instead of evaporated milk? It’s just that I want to make it right now but don’t have the evap. milk on hand. Thanks

    1. Yes, you can freeze it up to 3 months. Let it cool completely and wrap individual slices in saran wrap and place in a freezer safe bag or container, or you can freeze the entire loaf in a large freezer safe bag. Once ready to eat, thaw it out in the fridge overnight and then re-heat in the microwave, if desired.

  2. This recipe looks awesome. I have one question ingredient list does not include eggs but instructions says eggs. How many eggs?
