Homemade Drop Biscuits Recipe FAQs
Cara’s Tips: What is the secret to a good drop biscuit?
- Don’t overmix the biscuit dough – Stir the mixture until just combined and it’s okay if looks a bit lumpy. The less you stir, the softer + fluffier the biscuits will be once baked.
- Freeze & grate your butter – This is a trick I use with all my biscuits and it ensures the perfect amount of butter gets evenly distributed in every biscuit. I recommend freezing your butter at least 15 minutes in advance and using this affordable box grater.
- Use a cookie scoop – This dough can be sticky and using regular spoons can be a pain. That’s why I recommend using a cookie scoop to scoop out your biscuits in the pan. I love using this set for all my biscuits and cookies.
P.S. Don’t forget to grab a bag of fresh self-rising flour for the best biscuits!

Hi I tried these and the batter was nowhere near the expected consistency. No body to the batter using the ingredients as listed and buttermilk I made with whole milk and vinegar. What might have occurred? Could you give a weight for the self-rising flour instead of a cup measurement? Thank you.
Hi Martha! A DIY buttermilk will have the same flavor, but unfortunately it isn’t going to be nearly as thick as regular buttermilk and it can impact things. I’d recommend adding 3/4 of the liquid you make, combining with the flour, and then adding a little bit more liquid if needed. The amount of flour would be 250 grams by weight. I hope that helps and you’ll give them another try!
Thank you I will try again!
