Easy Christmas Butter Cookies

Hey everyone! I’m excited to be back with my second cookie recipe in my Christmas Cookie Countdown today, and it’s one that takes me straight back to my childhood. This delicious butter cookie recipe is from the “My Little House Cookbook” (which was also my first cookbook), and my Mom and I used to love making these cookies together.

These butter cookies are soft with a yummy butter flavor, and have just the right sweetness level. Butter cookies can be made plain, topped with sugar, or my favorite way – dressed up with festive Christmas sprinkles.

Easy Christmas Butter Cookies

These Christmas Butter Cookies are SO easy to make and I love that they only require basic ingredients. They’re also perfect for baking beginners and fun to make with kids. My boys loved dipping the butter cookies in the sprinkles and sugar when we made them, and I absolutely love how festive and pretty they turned out. (I love using this multi-pack of sprinkles which comes with both!)

When it comes to plain Christmas cookies, there are typically three basic types including sugar cookies, butter cookies, and shortbread cookies. Sugar cookies are typically the sweetest, contain the highest amount of flour, and are best suited for cut-out cookies. Shortbread cookies have a high amount of flour and butter in them, and are more of a crumbly consistency.

Butter cookies (my favorite) are the perfect blend of the two, and have a soft, buttery flavor to them. They can also be rolled out into a more thin cookie and cut into shapes, but I personally love them like this because of their soft texture. If you find sugar cookies to be too sweet and shortbread cookies to be too crumbly, I highly recommend giving these delicious and easy Christmas butter cookies a try.

Ingredients

Scale
  • 1 1/2 cups flour
  • 1/2 teaspoon salt
  • 1/2 tsp baking soda
  • 1 stick unsalted butter (room temperature)
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2 tablespoons sugar or christmas sprinkles

Instructions

  1. Preheat oven to 375 degrees
  2. Combine flour, salt, and baking soda, and set aside
  3. Cream softened butter and sugar until well combined. Add the egg and vanilla and mix together well.
  4. Begin adding the flour mixture to the wet mixture, 1/2 a cup at a time. Continue stirring until flour no longer shows.
  5. Pour sprinkles or sugar (if making plain) into a shallow bowl.
  6. Use a small to medium sized cookie scoop to create balls
  7. Press one side into the sugar or sprinkles and place sprinkle side up onto a parchement paper lined baking sheet, at least 1 1/2″ apart from each other.
  8. Bake butter cookies for 12 minutes or until cookies are lightly browned. Place on cooling rack before placing in an airtight container to store. Enjoy!

Notes

*You can also create smaller cookies if desired, but the larger size will create a softer texture.
