Can’t decide between brownies and chocolate chip cookies for dessert? You don’t have to!

Today I’m sharing my Easy Chocolate Chip Brookies (aka brownie cookie bars), which are perfect for those days when choosing between two desserts is just too hard.

Because, let’s be honest – there are days where you want a brownie…AND a cookie.

Plus, I’m pretty sure brownies and cookies were meant to be best friends anyways (kinda like peanut butter and chocolate).

These Chocolate Chip Brookies are made with my homemade Mom’s Famous Chocolate Chip Cookie Dough and a simple boxed brownie mix, and give you the best of both worlds. 

These brownie cookie bars are beyond delicious, soft, fudgy, and the perfect dessert for anytime of the year.

Easy Brookies (Brownies + Cookies)

So…What is a Brookie? 

Lots of people ask what a brookie is, and a brookie is the perfect dessert in my honest opinion.

It’s a brownie and chocolate chip cookie in one!

Some people call them chocolate chip cookie brownies, or brownie cookie bars, but regardless of the name, they’re beyond delicious and so easy to make.

How to Make The Best Brookies

To make my easy brookies you will need a boxed brownie mix and all the ingredients below to make the homemade chocolate chip cookie dough.

I prefer using a boxed brownie mix because it saves on time and they taste delicious in this recipe. Feel free to use your own homemade recipe, but I say skip the hassle and grab a box of your favorite mix.

This brookie recipe can also be easily switched with yummy add-ins and toppings. (See my tips below for ideas!)

 

Tools Needed for Brookies

  • 1 Boxed Brownie Mix (I love Milk Chocolate Brownies by Betty Crocker, but any kind/brand will work)
  • Eggs
  • Oil
  • Milk (or water, if preferred)
  • Semi-Sweet Chocolate Chips

Tips & Tricks for Making Delicious and Easy Brookies

Tip #1 – Use milk instead of water in your brownie batter.

This is a little trick I learned a couple years back and it makes your brownies so creamy and delicious. If you have chocolate milk – even better!

 

Tip #2 – Don’t overmix your brownie batter!

Use an electric mixer to combine ingredients until there’s still some dry batter showing and then switch to manual stirring. Gently fold until just combined.

Tip #3 – Use a cookie scoop for adding in your cookie dough and an icing spatula to swirl your batter.

It makes it SO easy and looks so pretty and yummy!

Tip #4 – Switch up the flavor of these brookies!

These brookies are incredible made as is, but you can also have fun by using different ingredients to change the flavor.

Just a few ideas include using chocolate chip peanut butter cookie dough, adding in nuts for extra crunch, or using different types of chocolate chips such as white, caramel, or butterscotch. 

 

Tip #5 – Spray and line your pan with parchment paper and non-stick cooking spray for easy removal.

There’s nothing worse than making a batch of brownies and then have half of it being stuck to your pan.

This parchment paper is my absolute favorite!

Tip #6 – Let your brookies cool completely before slicing and removing from pan.

As tempting as it is, they need a little time to firm up for mess-free cutting. I also recommend using this knife for easy cutting. 

 

Tip #7 – Top your brookies with chocolate chips, a chocolate, caramel, or peanut butter drizzle.

My favorite way to enjoy brookies is served warm with a scoop of vanilla ice cream. SO yummy!

 

How to Store Leftover Brookies

To Store:

Any leftover brookies can be stored in an airtight container for up to 1 week.

I love using this cake pan to make my brookies because it has a convenient airtight lid I can place on it after baking. 

 

To Freeze:

These brookies can also be easily frozen for up to 3 months.

Wrap individual brookies in plastic wrap and place in a freezer safe bag.

Let thaw in the refrigerator and re-heat in the microwave until warm.

Chocolate Chip Brookies

Ingredients

Scale

Chocolate Chip Cookie Dough:

  • 1/2 cup unsalted butter (room temperature)
  • 1/2 cup light brown sugar (packed)
  • 1/4 cup granulated sugar
  • 1 egg
  • 1 tsp vanilla extract
  • 1 1/4 cup self-rising flour
  • 3/4 cup chocolate chips

Brownies:

  • 18 oz boxed brownie mix, prepared as directed*
  • 1/3 cup semi sweet chocolate chips (optional, but make the brownies taste incredible)
  • Additional chocolate chips on top, if desired

Instructions

  1. Combine softened, unsalted butter with light brown sugar, sugar, egg, and vanilla extract in a large mixing bowl. Use an electric mixer and mix until creamy and smooth.
  2. Slowly begin adding flour to mixture 1/2 batch at a time until well incorporated.
  3. Stir in chocolate chips and refrigerate cookie dough while you prepare your brownie batter.
  4. Prepare boxed brownie mix according to package directions, subbing milk for water, and adding chocolate chips to batter, if desired.
  5. Pour brownie batter into greased and parchment paper lined 9×13 cake pan.
  6. Using a medium cookie scoop, add cookie dough on top of the brownie batter.
  7. Using a spatula, carefully flatten cookie dough and begin lightly swirling cookie dough for a marbled effect. You can mix it around as much or as little as you want and it will turn out amazing!
  8. Bake in the oven at 325 for 40-45 minutes. It’s okay if the brookies are still slightly gooey in the center, they will continue to cook as they cool.
  9. Remove brookies from oven and if desired, top with additional chocolate chips. Let cool for 30 minutes before cutting with this knife and enjoy! Eat alone or serve with vanilla ice cream and drizzle with chocolate or caramel sauce.

*For creamier brownies, substitute milk for water in brownies
